  2. Beet Juice Pickled Eggs

One of fun ways to pickle eggs is in beet juice so that the egg whites turn a pretty pink. The beet brine, which is guaranteed to add a little magic to your food, contains beet juice, apple cider vinegar, allspice, bay leaf, chilli pepper and salt. I didn't add extra sugar because the beet juice is sweet enough. You can use other spices like cloves, mustard seeds, onion, caraway seeds, and peppers to the brine. Allow to sit for 48 hours or more for maximum flavour. Serve with a salad for a light meal or enjoy them as a snack.

Store the eggs in an air-tight container for a week.

  8. Sweet Potato and Beluga Lentil Salad with Poached Egg

With this salad, you don't have to choose between nutrients-dense black lentils and sweet potatoes. Together with some fresh herbs and a poached egg, you can expect a real flavour experience. If you can't find beluga lentils, use French puy lentils. They both share the same size and texture and also hold their shape well when cooked. When poaching eggs, use the FRESH ones, ideally at room-temperature, as older eggs tend to have watery egg whites that won't closely surround the yolk when poached.

It transports well and can be enjoyed warm or cold. You can use ready-to-roll butter puff pastry in place of keto crust or shortcrust as the base for this quiche, though making your own pastry is far easier than you might think. If you use ready-made pastry, the tart can be ready in about 30 minutes.

  65. Mushroom Parmesan Tart

Creamy, delicious, and so moreish, mushrooms are the star ingredient in this simple savoury tart. It is ideal for lunch or as a starter for a dinner party. With Parmigiano-Reggiano and mushrooms, it's a comfort meal guaranteed to please everybody. The pastry and filling can be prepared one day before. The good thing about this mushroom tart is that you can enjoy it hot right out of the oven, at room-temperature or cold from the fridge. I even reheated it in my airfryer for 5 minutes and it still tasted GREAT. Serve it with a bitter green salad if desired.

  66. Garam Masala Minced Beef and Pea Quiche

This simple, hearty savoury tart is perfect for simple weeknight dinners or an easy meal that wows guests. The true Parmigiano-Reggiano cheese speaks for itself, and mixed with eggs and heavy cream makes the perfect base for the minced beef and green pea filling. You can stick to the basic quiche crust, or flavour it with a bit of turmeric and black pepper for the colour, health and fun. Serve the quiche with a simple salad and a glass of medium-body red wine, such as Cotes du Rhon. Adding garam masala to the ground beef has brought out the best flavour of the meat and add a little sweet hint to it. If you don't have the spice blend, use curry powder instead.

  67. Qiong Shan Tofu (Steamed Egg Whites Hainan Style)

"Qiongshan or Qiong Moutain" is situated on the northern coast of Hainan province, China. 'Tofu' here is not made from beancurd, but egg whites. Then why is it called Tofu? Because of its smooth, silky and delicate texture resembles to 'tofu'. This is one of many well-known local specials, flavourful and delicious.

  68. Fig Pavlova

Pavlova is a meringue-based dessert usually with whipped cream and fruit. Created in either Australia or New Zealand in honour of the Russian ballerina Anna Pavlova, who toured Australia and New Zealand in 1926. I used Greek yoghurt instead of whipped cream and if you don't have or like pistachios, lightly toasted flaked almonds are just as good. You can also tweak the fruits to suit your tastes and the seasons.

  69. Son-in-law Eggs - Thai Fried Eggs

Son-in-law eggs (kai loug kheuh), a Thai street food staple, are pre-boiled for 6 minutes to achieve their coveted creaminess, then dropped into piping hot fat / oil to crisp up.

  70. Easy Caviar and Egg Tarts

The secret to stress-free, relaxed entertaining is with these easy nobake tartlets using premade tart shells from a local grocery store for convenience. Not only are they absolutely tasty, they are also ready in 15 minutes, meaning you can whip it up at a moment’s notice. Use all-butter crust shells if you can, after all, nothing beats what butter can provide. Otherwise, I would recommend making your own using this or this.

Until very recently, doctors said that you could not eat more than 1 or 2 eggs a week because it increased cholesterol. Today all that has changed and it seems that you can eat 1 or 2 a day. Just in case, I don't abuse.
