Green Bean Salad with Bacon and Grated Eggs

Green beans are such a versatile vegetable. Blanch them and toss with crispy bacon, shaved egg and a wholegrain Dijon mustard vinaigrette for a delicious green bean salad that's perfect for lunch or dinner party. You can prepare green beans, bacon, dressing and eggs in advance and store separate in the refrigerator. Put it together just before serving. Haricots verts are French green beans, they are thinner, longer and straighter and cook faster.

 
  • 2 Eggs
  • 200 g Green beans, trimmed (I used haricots verts)
  • 120 g Smoked streaky bacon, chopped
  • 2 French shallots, finely sliced
  • 1 Garlic clove, peeled and finely minced
  • 2 tsp Wholegrain Dijon mustard
  • 1 ½ tbsp Red wine vinegar
  • 3 tbsp Extra-virgin olive oil
  • Salt and pepper
  1. Bring a large pan of water to the boil and cook eggs for 7-8 minutes. Place eggs into cold water to prevent further cooking. Cool and peel.
  2. Blanch green beans in boiling water for 2-3 minutes. Refresh in cold water. Drain well. Transfer to a salad bowl.
  3. Cook bacon over medium-high heat for a few minutes until golden and crisp. Toss through green beans.
  4. Combine French shallots, garlic, mustard and vinegar together in a small bowl. Mix well. Whisk in olive oil until thick and thoroughly combined. Season with salt and pepper to taste. Drizzle 1/3 of the dressing over the beans and bacon. Toss to mix well.
  5. Place the dressed salad on a large plate. Grate eggs over the top of the salad. Drizzle with more dressing and serve immediately.

Eggs are always a lovely addition to a salad, I usually put them in wax beans salad with some red onion as we do not have green beans here.
