Poppyseed Rye Cookies with Cherry and White Chocolate

These rye cookies are soft and gooey in the center, and crunchy around the edges. The dough uses a combination of medium rye flour and plain flour. Rye flour has a nutty, earthy, and characteristic malty taste that brings out the best in ingredients like chocolate, butter and warm spices. The low-gluten of rye gives these cookies a delicate and unique chewy texture that’s hard to beat. It also absorbs more water, making these cookies very moist and tender. Use dark chocolate or other dried fruit if you wish.

Lavender Chocolate Cookies

If you fancy something sweet but don't want to bake a cake, homemade cookies are a great alternative. They are quick to bake, taste delicious and are great for sharing. Simple and delicious with crunchy edges and a slightly soft center, these lavender chocolate cookies will surprise you with an intriguing and unexpected flavour combination. Dark chocolate harmonises perfectly with the slightly floral aroma of dried lavender flowers. A pinch of sea salt rounds off the flavour. Leave the cookies to cool on the tray a few minutes before transfering them to wire rack to cool as the cookies are still very soft fresh from the oven and could otherwise break. If you don’t have fleur de sel, use sea salt flakes.

Schoko-Engelsaugen

A chocolate twist on a classic featuring black cocoa and white couverture filling! Engelsaugen, or Angel's Eyes, are small shortcrust biscuits with a fruity jam filling, resembling the American thumbprint cookies. They are a real classic for Christmas's cookie tray. The dough is easy to prepare and is literally melt-in-mouth. Ground almonds are also added to provide a wonderful nutty flavour. I like the effect of the contrast of white chocolate and deep black, but you can also fill your angel's eye biscuits with jelly or melted nut nougat.

Lemon Juniper Cookies

Juniper berries have been used as medicine for centuries and in the kitchen. Delicious and healthy juniper berries are usually added to sauces for game dishes, fish stock, sauerkraut, or pickled vegetables, but they are rarely used in baking. I have used juniper berries in a very unusual way: as a spice together with some pink peppercorns for these delicious lemon cookies. The ground juniper berries give these cookies a sweet, aromatic and completely surprising flavour - be sure to try them! They are particularly tasty for the holidays, but of course also all year round, and go wonderfully with coffee, tea or hot chocolate.

Bethmännchen

Marzipan, rose water and almonds - these are the key ingredients for traditional Frankfurt Bethmännchen. Sounds marvellous, doesn't it? For those who don't know them, Bethmännchen are the jazzed up Marzipankartoffeln / marzipan potatoes (Christmas without marzipan is like Lübeck without the Holsten Gate - simply unimaginable for many German) from Frankfurt am Main. In fact, the name Bethmännchen is derived from the Frankfurt Bethmann family and they are a must during the Christmas season. Another typical feature of the Frankfurt marzipan speciality is that exactly three almond halves are pressed into the balls before baking. They give the Bethmännchen their typical appearance and additional crunch. Store them in an airtight container for up to 2 weeks.

These Christmasy cinnamon biscuits are made with roasted hazelnuts and without any flour, fat, dairy or eggs. They are subtly sweet and nutty with wonderful hints of vanilla and cinnamon and iced with a tangy lemon drizzle. Simply delicious with coffee and they smell wonderful! To make them even less guilty, I replaced icing sugar with powdered erythritol.

Himmelsboten Heavenly Messengers

These Himmelsboten are not only popular with the little ones. My husband is also completely addicted to these cookies. I used a simple and very basic 3-ingredient shortcrust pastry, but you can add some orange peels or vanilla extract. Cut it out and then decorate with sugar icing and chocolate lentils or almonds if you want a healthier alternative. They are a delicious creation for the Christmas season. There are only two other things to note. The prongs of the stars should be at least three centimetres long so that you can wrap the Smartie or almond well. And you need a star or snowflake cookie cutter with five prongs so that the celestial messengers look like a humab figure.

Deliciously festive cut-out cookies inspired by the classic Mozartkugel, a praline made from chocolate, pistachios, marzipan and nougat. It was created by Salzburg / Austria confectioner Paul Fürst in 1890 and named after the composer Wolfgang Amadeus Mozart. The heart of the Salzburg Mozartkugel is made from green marzipan. Use raw pistachios for a better result.

Garibaldi Biscuits

Garibaldi biscuits (unkindly called 'squashed flies' by children), named to honour Italian General Giuseppe Garibaldi, who fought for the unification of Italy in the 19th century, are made by sandwiching the dried fruit with thin shortcrust pastry. Then the dough is sliced into rectangles and baked until light golden. The chocolate glaze is completely optional. You can simply dust some Demerara sugar on top after brushing with egg white. If sultanas and currants aren’t to your taste, use your favourite dried fruit – just make sure that you cut it up to the size of a currant so it bonds suitably to the biscuit dough.

Biscotti Reginelle

Biscotti Reginelle, aka Biscotti Regina or Biscotti Inciminati, are classic cookies from Palermo (the capital of both the autonomous region of Sicily and the Metropolitan City of Palermo), but they are popular all over the island of Sicily. They were named after Queen Margherita di Savoia, hence the name Biscotti Reginelle, which means Queen Cookies.
These delicious Italian cookies are not too sweet and are loaded with sesame seeds. The crunchy texture makes them the perfect accompaniment to coffee, hot chocolate, or sweet wine. To make these cookies even more authentic, use 100% of lard instead of a mix of butter and lard. Once completely cooled you can store these cookies in an air tight container for at least two weeks. They freeze well too.
