Breakfast Tortilla with Fried Egg, Cucumber Salsa and Chilli Sauce

Breakfast Tortillas are fresh and delicious with fried egg, cucumber salsa and top with a homemade chilli sauce or your favourite hot sauce, which harmonizes perfectly with the delicate fried egg. Both cucumber salsa and chilli sauce can be made ahead, and when ready to serve, warm up the tortilla wraps and fry eggs. You can also add some bacon and cheese for a even richer and more satisfying meal.

 
Chilli SauceCucumber Salsa & Assembly
  • 2 Fresh red chilli peppers, deseeded and chopped
  • 3 Shallots, finely chopped
  • 2 Garlic cloves
  • 1 tbsp Olive oil
  • 1 tbsp Tomato paste
  • 200 g Canned tomatoes, peeled and chopped
  • 3 tbsp Ajvar, spicy or mild
  • Salt and pepper, to taste
  • 1 tbsp Freshly squeezed lime juice
  • 1 Cucumber, cubed
  • 10 g Mint leaves, chopped
  • 10 g Chives, cut into thin rings
  • 1 tbsp Freshly squeezed lime juice
  • 3 tbsp Extra-virgin olive oil
  • Sea salt
  • 4 Tortilla wraps
  • 4 Eggs
  1. For the chili sauce, halve chilli peppers lengthwise, remove seeds and finely chop. Peel and finely chop shallots and garlic. Heat olive oil in a saucepan over medium heat for 2 minutes. Stir in tomato paste, add tomatoes and ajvar, season everything with salt, pepper and lime juice and simmer over low heat for 10 minutes, stirring occasionally, until creamy. Set aside to cool for 5 minutes.
  2. In the meantime, clean and wash the cucumber and cut into small cubes. Wash mint leaves, shake dry and chop. Cut the chives into fine rolls. Add chopped mint leaves, chives to the diced cucumber together with lime juice and 2 tablespoons of olive oil. Taste and season with sea salt.
  3. Preheat the oven to 80C/175F. Warm up the tortilla in the hot oven for 5 minutes. Heat remaining olive oil in a skillet. Gently crack each egg into the skillet. Let the eggs cook for 3 minutes or until white is completely set. Divide tortilla among plates. Top with fried egg, cucumber salsa and chilli sauce. Roll up tortilla and if desired, wrap it in a aluminium foil and enjoy.

Looks colourful especially on that black plate. We call chilli paste 'ajvar' here, but we make it from sweet red peppers and it is one of the national dishes here at the Balkans.

I know this recipe is meant to be all about the eggs, with bacon and/or cheese being added as an option. However, as I don't eat fried eggs, I might just go for the options instead, both bacon and cheese please, if that's alright with you?

This sounds like such a yummy and easy breakfast idea! I love the idea of adding some homemade chilli sauce to the mix to add some extra flavor and spice. The fact that the salsa and sauce can be made ahead of time makes it even more convenient for busy mornings.
