Keto Breakfast Egg Sandwiches

The delicious combination of hard-boiled eggs, crispy bacon, creamy avocado, earthy aged Cheddar cheese and fresh salad not only tastes great, but also provides a balanced mix of protein, healthy fats and fibre. The tender texture of the eggs harmonises perfectly with the crispy bacon, while the avocado adds a creamy note and salad adds a refreshing touch. It's naturally gluten-free and keto-friendly.

 
  • 5 Large eggs, at room-temperature
  • 5 slice Breakfast bacon
  • 45 g Kerrygold Cheddar
  • 1/2 Avocado, peeled and sliced
  • Salad leaves
  • Sea salt and freshly milled black pepper
  • Parsley, finely chopped (optional)
  1. Boil the eggs in a saucepan of boiling water for about 8-10 minutes, then peel and cut in half.
  2. Fry the bacon in a pan until crispy.
  3. Place the boiled eggs on a plate and season with salt and pepper.
  4. Place a salad leaf on an egg half, top with bacon, avocado and Cheddar. Now cover it with another egg half and secure with a finger food toothpick. Sprinkle some chopped parsley over if desired.

Oh, I see you have started your usual egg March ahead of Easter LOL
I have not eaten much eggs for a decade or two, since I was a borderline vegan, but now that I went glufree exactly a jahre ago I do need them for my oat omellettes so I started eating them again. I do not fry them, though, or boil them on their own. I have bought some reddish chard today at my grocers, the spring is here.

I just love egg sandwiches, and this looks like a hearty, healthy, and tasty breakfast. It looks yummy, but I think I would do 4 min eggs so the yoke is still a little soft. That is a really interesting was to eat an egg sandwich. Just curious, is the egg cold or it that cheese so hard it doesn't melt? They look very yummy that's for certain!

Te comento; en mi pais es típico el llamado "Chivito".
Tu propuesta me hizo recordarlo.
A los ingredientes de tu receta de desayuno, (el Chivito es para el almuerzo o cena) se le agregan otros ingredientes a esos, como jamón, aceitunas, hongos, todo dentro de dos panes llamados "tortugas". Este pan sabe ser muy suave.
Buena idea la que nos dejas. Seguro estará dentro de mis bocados.
