Romaine Hearts with Chunky Blue Cheese Vinaigrette
Wednesday, June 04, 2025An uber-simple salad, this is a spinoff of the classic iceberg wedge with blue cheese dressing. But instead of iceberg, I used romaine hearts. The classic creamy blue cheese dressing gets an upgrade with large crumbles of blue cheese tossed in a pungent vinaigrette. Add some crispy croutons and smoky bacon to the salad if you wish. I used Castello Danish blue, which contains animal rennet, so it is not suitable for vegetarians.

Snap Pea, Baby Corn and Beansprout Salad

|
Fresh, nutty and so crunchy, this simple Asian salad is great for a light lunch or as a side for some grilled meat. It’s a chore to snap off the stringy tails of mung bean sprouts, but they look prettier and taste so much better without tails. If you can’t find fresh baby corn, then use canned one, but the taste and texture won’t be the same.
Kohlrabi Salad with Curry Dressing and Smoked Salmon

|
This kohlrabi salad is really easy and quick to make and it makes a great change to the carb-loaded potato salad for grill. Kohlrabi, aka Kohlrübe, is a typical German vegetable, because nowhere else in the world consume such a large quantity of this root vegetable as in Germany. You can either peel and dice the kohlrabi before cooking, or boil them whole for 20 minutes to preserves valuable nutrients, then peel and dice. If you can't find kohlrabi, try using other root vegetables like turnips, parsnips or rutabaga. Dill can be substituted with flat parsley.

Asparagus Salad with Jamón Serrano and Mini Buffalo Mozzarella
Sunday, March 16, 2025 |
|
The earthiness of asparagus, creaminess of buffalo Mozzarella and the saltiness of Jamón Serrano work wonders together. This salad can be served either hot or cold, so it’s a good one to have up your sleeve for the asparagus season. The heat destroy the purple pigment, so purple asparagus will eventually lose its colour and turn into deep green. So no worries, if you can't find purple asparagus, simply use the green one. Jamón Serrano can be a bit pricey, iuse normal ham if you want to.

German asparagus meets Italian balsamic vinegar, then covered with a poached egg on a bed of baby spinach and served with a simply green sauce. If classic Hollandaise is becoming a little too monotonous for you, you should definitely try this seasonal explosion of flavour. It’s simple and fresh and goes great with steak or chicken or to enjoy as a light meal. Shave some Parmesan over if desired.
Baby Spinach Salad with Avocado and Blackberries
Saturday, March 08, 2025Make the most of fresh seasonal produce with this easy, but scrumptious spring salad. If you haven’t tried pairing fruit with your salad before, you are missing out. Seasonal fruits add not only colour, but also right amount of sweetness and texture to an otherwise boring green salad. Feel free to substitute baby spinach with other leafy greens.

If you are looking for a delicious and easy salad recipe, these tender princess beans with pickled carrots over ricotta cream are an ideal choice. Princess beans are small green beans that are harvested young and only have very small or no seeds. You can use French haricots verts, which are much thinner, longer and tender than regular green beans. Pickled carrots can be prepared one day ahead, actually it tastes better after 24 hours and will stay fresh and crunchy for at least a week.

A simple, delicious homemade cabbage slaw with a sweet and tangy vinaigrette! Dress the cabbage the day before to allow it to wilt slightly, then toss with radicchio and toasted almonds the next day to add crunch. It is a wonderful accompaniment to almost any meal and is especially nice with grilled meat, poultry, or seafood or enjoy it straight up.
Coleslaw was initially created in the Netherlands. The term coleslaw originates from the Dutch (koolsla) that combines the kool, meaning "cabbage," and sla, meaning "salad.
Mango and Avocado Salad with Carob Miso Vinaigrette

This fruity avocado salad with mango tastes simply delicious. Chilli rounds off the whole thing with a spicy note and the rice crackers provide the crunchy effect. If you want to use some homemade croutons, then cut the 2-3 slices of wholegrain bread into 1 cm cubes and dry toast them in a skillet until golden and crunchy. Remove and toss with a tablespoon of olive oil.
