These kofte served with a light slaw and creamy labneh over warm flatbread are incredibly delicious, flavourful and ridiculously simple to make. A mediterranean-inspired meal perfect for summer evenings. Make them with beef or/and lamb mince. I have threaded kofte with rosemary stems, but you can use metal or bamboo skewers. I prefer to make kofte without any filler, but you certainly can add a slice of finely chopped toasted bread or even plain breadcrumb to the mixture.

An uber-simple salad, this is a spinoff of the classic iceberg wedge with blue cheese dressing. But instead of iceberg, I used romaine hearts. The classic creamy blue cheese dressing gets an upgrade with large crumbles of blue cheese tossed in a pungent vinaigrette. Add some crispy croutons and smoky bacon to the salad if you wish. I used Castello Danish blue, which contains animal rennet, so it is not suitable for vegetarians.

This kohlrabi salad is really easy and quick to make and it makes a great change to the carb-loaded potato salad for grill. Kohlrabi, aka Kohlrübe, is a typical German vegetable, because nowhere else in the world consume such a large quantity of this root vegetable as in Germany. You can either peel and dice the kohlrabi before cooking, or boil them whole for 20 minutes to preserves valuable nutrients, then peel and dice. If you can't find kohlrabi, try using other root vegetables like turnips, parsnips or rutabaga. Dill can be substituted with flat parsley.
