Lamb neck is an underrated and economical cut of lamb. Like lamb shanks, it is a tough cut that needs very long, slow cooking, so it breaks down the connective tissue, imparting a flavour and tenderness. Lamb neck has the bone in the middle and a good amount of meat surrounding it. You can source them from Mediterranean or Turkish supermarkets. This recipe is simple to put together and a perfect cosy dinner for the family on those cold winter nights.

- 2 kg Lamb necks, cut into 2 inch thick
- Sea salt and ground pepper
- 16 Garlic cloves, peeled and smashed
- 1 1/2 cups Dry white wine
- 2 Organic lemons, cut into wedges
- 2 tbsp Mint leaves, roughly chopped
- 2 tbsp Rosemary, chopped
- A few Mugwort sprigs
- Enough hot beef stock to just cover the meat

- Pre-heated oven to 230F/450F. Pat-dry your lamb necks and season generously with salt and pepper, and place in a roasting pan.
- When the oven is ready, roast the lamb necks until browned, for about 30 minutes.
- Take out of the oven and reduce the oven temperature to 180C/350F. To the pan add your garlic, wine, lemon wedges, herbs, enough hot stock to almost cover the meat. Cover tightly with aluminum foil and return the pan into the oven for 2-3 hours or until the meat is fork tender.
- Taste and season with salt and pepper if needed and serve with roast sweet potatoes, noodles or bread.

We've never had lamb necks although we do love lamb chops, leg of lamb, etc. Good luck finding a Mediterranean or Turkish grocery here in East Tennessee! Still, this is an amazingly attractive and desirable entree that we would enjoy! Take Care, Big Daddy Dave

I know you think this would be bland without the garlic, but I would substitute shallots. I don't know if I can find lamb neck, but I will talk to my lamb folks at the farmers market and I imagine they can help me. This sounds wonderful, Angie!

Our family enjoys lamb shanks but I never cook them because it takes such a long time. Well, another cut of lamb (lamb necks) that takes long time cooking. But very sure it is a delicious flavorful cut.
