  14. Fleischsalat aus Rinderzunge / Beef Tongue Salad

Fleischsalat is a classic German meat salad made with sausage, pickles and tossed with a mayonnaise dressing. They are often eaten with some German bread or Brötchen / buns. I am using the beef tongue instead as I enjoy organ meat and like to experiment with eating offal. Use mortadella or other ham instead if you don't eat organ meat.

  15. Crunchy Vegetable Wraps with Green Pea Dip

Veggie wraps are fun and easy to make, ideal as a snack and a perfect alternative to bread when you're trying to lower your carb intake. They are grain-free, gluten-free, fiber-packed and totally customizable! Besides lettuce, you can use chard, kale, and collard greens to make these wraps too. I am using mint and green pea dip, but you could try any spreads and sauces you enjoy--try traditional hummus, guacamole, peanut sauce or ranch.

This hearty everyday salad is a lean-protein powerhouse thanks to chicken and kidney beans. You can also use black beans, chickpeas or edamame instead. Carrot top pesto can be made 1 day ahead. 21. Keto Cucumber Sandwiches with Goat Cheese and Black Olive

  22. Keto Smashed Cucumbers With Whipped Tahini

By ‘smacking’ the cucumbers in this refreshing side dish you create more rough surfaces to better soak up the spicy sauce. It makes a great accompaniment to grilled chicken or skewered steak. Feel free to use more chilli sauce if you want it really spicy or less chilli oil if you prefer it milder. Whipped tahini is creamy, nutty, richly satiating and comes together in a snap using a stick blender.

  23. Nori Tuna Salad Wraps

Fill with tuna mayonnaise, lettuce, avocado, cucumber, alfalfa sprouts and sesame seeds, these seaweed wraps make a sustaining and nutritious meal that's keto friendly, low calorie, high protein and jam packed with flavour. 24. Green Superfood Salad with Black Garlic Vinaigrette

This lean green superfood salad is easy to make, loaded with curly lettuce, sprouts, cucumber, arugula, avocado, and a simple black garlic vinaigrette. A nutrient-dense and gluten-free salad that's perfect as a light lunch or a side for some steak or seafood. 25. Breakfast Tortilla with Fried Egg, Cucumber Salsa and Chilli Sauce

Breakfast Tortillas are fresh and delicious with fried egg, cucumber salsa and top with a homemade chilli sauce or your favourite hot sauce, which harmonizes perfectly with the delicate fried egg. Both cucumber salsa and chilli sauce can be made ahead, and when ready to serve, warm up the tortilla wraps and fry eggs. You can also add some bacon and cheese for a even richer and more satisfying meal.

  26. Accordion Cucumber Salad

The Asian salad dressing is terrific for all salads, but it pairs particularly well with cucumbers for a spicy, crunchy, and refreshing salad. I like to accordion slice the cucumber for fun, but cut the cucumbers as you prefer. It's gluten-free and keto friendly. If you are looking for a soya-free option, then use tamari or coconut aminos instead.

  27. Herby Cucumber Salad with Whipped Feta

Creamy, sea salted and mildly tangy Feta Lesbos (made exclusively from the milk of Lesbian breed sheep in the isle of Lesbos) and Greek yoghurt are whipped into a dip and top with a refreshing herby cucumber salad that goes well with every meal. It's naturally gluten-free and keto-friendly. Serve it with some crispy pita chips or crackers if you wish.

  28. Cucumber Spaghetti Salad with Dill Dijon Dressing

  29. Sweet and Sour Baby Cucumber Salad

A quick and easy cucumber side salad with a lot of flavour and perfect as a cooling element to any curry or an accompaniment for a summer grill. If you can't find baby cucumbers, just use regular one (English or Persian cucumbers are all good) that are deseeded and sliced.

    © 2024 | http://angiesrecipes.blogspot.com

  30. Charred Cucumbers with Coriander Goat Yoghurt and Zhoug

A beautifully refreshing summer salad to enjoy at your next grill party or simply alongside some roasted chicken or burgers. It's ridiculously quick and easy to throw together!
Zhoug is a popular Middle Eastern condiment that's made with cilantro, jalapeños, garlic, spices and olive oil. Basically, it's a spicy herb sauce, so if you ain't a fan of cilantro, use other herb sauce you like. If you can't find goat yoghurt, use plain Greek yoghurt instead.

  31. Cucumber and Feta Salad

Made with ridged cucumber, yellow cherry tomatoes, Kalamata olives, and feta Lesbos, this easy Mediterranean-inspired salad is perfect as a light summer lunch or served alongside any meal.
Ridge cucumbers, or outdoor cucumbers, tend to be shorter, plumper and they've got a rougher skin. You can use other varieties, such as long, slender English or smaller, (almost) seedless Persian cucumbers.

  32. Smoked Salmon Terrine with Pink Peppercorns and Gremolata

This luxurious and utterly delicious salmon terrine is much easier than its beautiful presentation suggests but should be made at least six hours before serving. It comprises a creamy filling wrapped in smoked salmon slices topped with a tangy herb condiment made with fresh lemon zest, dill, parsley, and fresh garlic. A real showstopper for your festive table or dinner party.

  33. Buffalo Smashed Cucumbers with Roquefort

‘Smashing / smacking’ cucumber is a Chinese cooking technique allowing them to absorb more sauce, hence more flavour. The combination of buffalo sauce with cucumbers might seem really weird, but it works like a charm. You get a punch of heat from the spicy, garlicky buffalo sauce immediately followed by a juicy burst of crunchy, cool cucumber that keeps you coming back for more and more.

  34. Smoked Salmon Mousse with Caviar

These wonderfully sophisticated bite-sized appetizers or snacks are incredibly easy to prepare yet impressive and can be done in 10 minutes. Smoked salmon is delicious and packed with nutrients, vitamins, and omega-3 fatty acids. Turning them into a mousse made with cream cheese is even better. Black caviar are optional, but they do add an elegant touch to the appetizers that your family or guests will love. The mousse can be made one day ahead and stored in your fridge. It actually taste better the next day as the flavors have time to develop. If you don't have a pastry bag, put the mousse into a small sealable plastic bag and cut the tip off the corner of the bag. You can also put the mousse in a bowl and serve with vegetables or/and crackers.

  35. Tahini Cucumber Gazpacho

During the summer months when it’s too hot to even think about cooking, this cold tahini cucumber soup comes to the rescue. Simply toss a handful of ingredients in a blender and, before you know it, you have something cool and refreshing yet surprisingly satisfying for the lunch! It's naturally gluten-free, dairy-free and keto-friendly.

  36. Tomato Salad with Cucumber, Physalis, and Gooseberries

Loaded with heirloom tomatoes, baby cucumbers and berries, this farmers' market inspired salad is delicious served with grilled kebabs / kabobs or salmon fillets. This simple salad definitely brings colour and vibrance to the dinner table.

  37. Pineapple Cucumber Jalapeño Salad

The combo of sweet juicy pineapple and crunch cucumber is absolutely delightful. Jalapeño here adds the perfect amount of kick while not being overpowering. I also sprinkled a pinch of Turkish pul biber, also know as Aleppo chilli flakes, over for subtle notes of cumin and fruity tang. It contains no seeds or inner flesh of the chillies, so it's not spicy at all. This salad is pretty straightforward and simple, so make sure to use the freshest and best produce you can find.

So many beautiful recipes Angie. There are so many people who have trouble with their tummies when they eat cucumbers, such a pity as there are so many different ways of using them. We eat a fair amount of cucumber mostly in our summer but when having guests I have to remind myself who can eat it and who can't - but that's life.
