These deliciously healthy cucumber bites are a great addition to any party menu. Crunchy, juicy cucumbers are filled with a creamy herby avocado-feta mixture, then top with trout caviar and crispy capers. Crispy, salty, briny—fried capers add an extra dimension of flavour and texture without effort to these simple cucumber bites. And for festive occasions or any dinner party, you can't go past trout caviar for flavour and wow-factor. They come together quickly, making them perfect for last-minute entertaining. Plus, they are naturally gluten-free and keto-friendly.

- Cut cucumbers crossways into 2,5cm / 1 inch slices. Use a small spoon or melon baller to scoop about half the seeds from the centre of each cucumber slice to make a cavity. Discard seeds. Place cucumber slices on a serving plate.
- Place the avocado, feta , chives and lemon rind in a food processor. Process until almost smooth. Add the lemon juice and process until smooth. Season.
- Fill the cucumber cavities with avocado cream. You can also transfer the avocado mixture to a piping bag fitted with a 1.5cm plain nozzle and pipe evenly into the cucumber cavities.
- In a small fry pan over medium-high heat, warm the olive oil. Carefully add the capers. Fry, swirling the pan gently to move the capers around, for 2-3 minutes or unti crisp. Use a slotted spoon to transfer capers to a plate lined with paper towel.
- Top the cucumber bites with some trout caviar and sprinkle the crispy capers over and some extra lemon zest if desired.

La mezcla aguacate-queso la preparo mucho en aperitivo, con pepino debe quedar ideal. Freír la alcaparra es la primera vez que lo veo, pero estoy segura que estará genial sobre ese relleno. El conjunto es riquísimo, a ver si lo pongo en práctica esta Navidad.

I just bought caviar for our Christmas Eve spread. I have a few little caviar toast/wafers, but they are SOOOO expensive. I love the cucumber base idea and of course capers are lovely with caviar. Thank you for your endless inspiration! Merry Christmas!
