Full of zing, crunch and fresh flavour, this recipe is a great way to use up some leftover homemade falafel. Whether it’s for breakfast, brunch or a quick snack, it’s a dish to enjoy with your family and friends. It is wonderful to enjoy it as a salad, but equally delicious stuffed into pitta pockets or with charred wraps. It’s very easy to make falafel at home, either using soaked chickpeas, or canned one for ease, and they can be fried, baked or airfried. Or just buy a pack of those premix and you will have the dinner in 30 minutes.
| Kefir Dressing |
- 10-12 Falafels (homemade or falafel mix)
- 1 Continental cucumber, cut into moon-shaped slices
- 2 Banana shallots, cut into rings

- 150 ml Kefir
- 2 Limes, juiced
- 1 Garlic clove, peeled and finely chopped
- 2 tbsp Extra-virgin olive oil
- ¼ tsp Erythritol or caster sugar
- 1 tbsp Dill, chopped, plus extra to serve
- 1 tbsp Mint leaves, chopped, plus extra to serve
- Sea salt and black pepper from the mill

- If you are using falafel mix, then prepare them following pack instructions. For the dressing, whisk together all the ingredients with some seasoning in a large bowl.
- Halve the cucumber lengthways, then use a small teaspoon to scrape out the watery seeds from the middle. Slice both halves into moon-shaped slices and tip into the dressing. Peel and slice the shallots into the rings and add to the salad. Toss together.
- When the falafels are ready, divide the cucumber salad between 2-3 plates and scatter over a little more mint and dill. Top with the falafels and enjoy!
