Checkerboard Salad with Cantaloupe, Cucumber and Feta

Bursting with fresh, summer flavours, this light and refreshing cantaloupe salad recipe is simply perfect for hot summer days when the melons are at their best. With salty briny feta, sweet juicy cantaloupe, crunchy juicy cucumber, and a citrusy dressing made with mint & lime, it's the perfect mix of savory and sweet. Serve it as a side dish at a barbecue or picnic.
Not only was it visually delightful and appealing, but it was so delicious that you would want to come back for more. You can also use bamboo skewers to thread them together with some fresh mint leaves.

 
SaladMint Lime Dressing
  • 1 block / 200 g Feta, cut into 1/2 inch squares
  • 1 Cantaloupe, peeled and cut into 1/2 inch squares
  • 2 Cucumber, peeled and cut into 1/2 inch squares
  • A handful Mint leaves, chopped, plus more for garish
  • 4 tbsp Extra-virgin olive oil
  • 2 Limes, juiced
  • Sea salt
  • Peppers (I used a mixture of white, black, green and pink)
  1. Whisk together the ingredients for the dressing and season with salt and pepper.
  2. Cut the flesh of the cantaloupe from the skin and cut into 1/2 inch squares or as square as possible. Cut the feta into the squares too. Peel the cucumbers, straighten the sides and cut the flesh into the squares.
  3. Arrange the prepared cantaloupe, cucumber and feta squares by alternating between them on a large platter and drizzle with the dressing. Garnish with more mint leaves and extra peppers if desired.

Que bonita ensalada, muy vistosa y fresca. Si la pongo en una barbacoa, seguro que es lo primero que comemos, hablo por mi, yo es lo que haría, ahora es lo que apetece y lo que más me gusta. El aliño también es muy rico y le va de maravilla.
