- Shred chicken. Place in a large bowl. Add cucumber, celery, carrot, coriander / flat parsley, and chilli pepper.
- Combine rice vinegar, sesame oil,, minced ginger, soya sauce and chilli flakes in a jug. Stir to combine. Pour over salad. Toss to combine and serve.

How are Lebanese cucumbers different from the regular ones? I've never heard of them before. I eat only the sweet salad ones, the domestic ones with little thorns on them I avoid.

@DEZMOND Lebanese cucumber has less seeds and smooth skin. I actually like those with bumpy and ridged skin.

I love sesame oil in my cooking, both in hot and cold food, so will often add it to my salad, especially as hubbie is not a fan of mayonnaise at all!
I'm afraid that I too, would have to take a fork to this dish though, as I have yet to master the correct use of chopsticks!
