Edamame and Green Beans with Pistachio Pesto

Pesto and Parmesan add great flavor to this beautiful vegetable dish that's packed full of healthy ingredients. A stand out side dish that's easy enough for a busy weeknight and the whole family will enjoy. It's quick and easy to make, on the table within 10 minutes. Use fava beans or peas if you can't find edamame.

 
  • 250 g Shelled edamame (thawed if using frozen)
  • 200 g Green beans
  • 60 g Arugula leaves
  • 2 Garlic cloves, roughly chopped
  • 75 g Toasted pistachio kernels
  • Juice of 1 lemon
  • 15 g Flat-leaf parsley leaves, chopped
  • 20 g Grated parmesan
  • 120 ml Olive oil
  • Salt and pepper
  1. Blanch peas and beans in a large pan of boiling salted water for 2 minutes or until tender. Drain, then refresh under cold water. Rub the edamame skin off if desired.
  2. Place rocket, garlic, pistachios, lemon juice, parsley and parmesan in a blender. With motor running, add the olive oil in a steady stream, processing until smooth. Season to taste with salt and pepper.
  3. Toss edamame and green beans with 1/3 of the pesto and serve remaining pesto on the side.

As you know grune ist meine lieblings colour so I would enjoy this very much. I actually cooked string beans today, the yellow ones, found them very fresh and new at the grocers and made a soup and put some in the freezer too.

Esta receta la haré solo con judías verdes, el edamame no lo suelo consumir. El pesto de pistachos me parece absolutamente delicioso.
