By ‘smacking’ the cucumbers in this refreshing side dish you create more rough surfaces to better soak up the spicy sauce. It makes a great accompaniment to grilled chicken or skewered steak. Feel free to use more chilli sauce if you want it really spicy or less chilli oil if you prefer it milder. Whipped tahini is creamy, nutty, richly satiating and comes together in a snap using a stick blender.

- Put the cucumber onto a chopping board and use the side of a cleaver or a rolling pin to smash the cucumbers. Chop the cucumbers into bite-size pieces and sprinkle with sea salt. Set aside for 1 hour to draw out the juices.
- Rinse off salt, drain very well, then add to a large bowl with remaining ingredients. Toss and season. Set aside for 15 minutes to allow the flavours to develop.
- Meanwhile prepare the whipped tahini. Place all ingredients in a blender. Whiz until smooth. Spread whipped tahini on a serving plate. Top with cucumber mixture and serve. Drizzle with extra chilli oil if desired.
