Keto Smashed Cucumbers With Whipped Tahini

By ‘smacking’ the cucumbers in this refreshing side dish you create more rough surfaces to better soak up the spicy sauce. It makes a great accompaniment to grilled chicken or skewered steak. Feel free to use more chilli sauce if you want it really spicy or less chilli oil if you prefer it milder. Whipped tahini is creamy, nutty, richly satiating and comes together in a snap using a stick blender.

SaladWhipped Tahini
  • 500 g Baby cucumbers
  • 1/2 tsp Sea salt
  • 1 tbsp Sriracha (or chilli sauce of your choice)
  • 40 ml Chilli oil
  • 1 tbsp Balsamic vinegar
  • 1 Red onion, finely chopped
  • 1/2 Chilli pepper, seeds removed and finely chopped
  • 35 g Roasted salted peanuts, crushed
  • 1 tbsp Sesame seeds, toasted
  • 2 tbsp Mint leaves, julienned
  • 150 g Tahini
  • 3 tbsp Lemon juice, freshly pressed
  • 1 clove Garlic, chopped
  • 1 tsp Sea salt
  • 50 ml Extra virgin olive oil
  • 80 ml Ice cold water
  1. Put the cucumber onto a chopping board and use the side of a cleaver or a rolling pin to smash the cucumbers. Chop the cucumbers into bite-size pieces and sprinkle with sea salt. Set aside for 1 hour to draw out the juices.
  2. Rinse off salt, drain very well, then add to a large bowl with remaining ingredients. Toss and season. Set aside for 15 minutes to allow the flavours to develop.
  3. Meanwhile prepare the whipped tahini. Place all ingredients in a blender. Whiz until smooth. Spread whipped tahini on a serving plate. Top with cucumber mixture and serve. Drizzle with extra chilli oil if desired.
