Generally I prefer cakes with vegetables in them. Whether it's a carrot cake or zucchini cake, cake with beet, etc. Vegetables turn cakes into a special and very moist treat. If you like your cake a little healthier and nuttier, you can also replace the white spelt flour with wholegrain spelt flour. Butternut squash, like potato, makes your bread twice as moist. But potatoes in low carb bread ain't a good idea. Sure, the squash also has a few carbohydrates, but much less than those tubers.

You can use ribeye, strip steak, fillet or sirloin to make the kabobs. My favourite is ribeye, but leaner sirloin is typically the best choice for using when making beef kabobs, as it is relatively tender, has great flavour, and holds together well on the skewer. Tzatziki can be prepared a day before. I used metal skewers to thread the meat, if using wood or bamboo skewers, then soak them first in water for 30 minutes. This will help prevent them from burning.

I often make this colourful summer squash casseole during summer months when they are in peak season or when I am looking for something healthy, flavourful and delicious for the family.
This classic summer meal couldn't be easier to prepare. Start by slicing the zucchini and tomatoes (about 1/4-inch thick) and place them in a baking dish. Prepare a Parmesan cheese and pork rind topping (use regular breadcrumbs if you ain't on keto) to scatter over the vegetables. Bake the casserole in oven until the crumb topping is golden and crispy.
