Low Carb Butternut Bread

Storebought low carb breads are either incredibly expensive or they simply don't taste good. This homemade version of low carb bread is super moist and flavourful thanks to the use of grated butternut squash, Parmigiano-Reggiano and marjoram, sugar free and gluten-free. Butternut squash, like potato, makes your bread twice as moist. But potatoes in low carb bread ain't a good idea. Sure, the squash also has a few carbohydrates, but much less than those tubers.

  • 300 g Butternut squash, grated
  • 160 g Blanched almonds, ground
  • 45 g Whole psyllium husks
  • 2 tsp Baking powder
  • 75 g Almonds, chopped (plus 1 tbsp for the topping)
  • 3/4 tsp Sea salt
  • 3 tsp Dried marjoram (or 2 tsp dried oregano)
  • 50 g Parmigiano-Reggiano, grated
  • 5 Eggs
  1. Preheat the oven to 180C/350F. Line a 20x11x7 loaf tin with baking paper. Peel and roughly grate the butternut squash.
  2. Mix the ground blanched almonds with the psyllium husks, baking powder, chopped almonds, salt, marjoram and grated Parmesan.
  3. Beat the eggs in a large bowl. Add dry ingredients and mix until smooth. Fold in the grated butternut squash.
  4. Scrape the mixture into the tin and sprinkle with chopped almonds. Bake in a hot oven for 40-45 minutes, remove and cool for 5 minutes before turning out onto a wire rack to cool completely.

Judee from Gluten Free A-Z Blog: What a beautiful looking bread . Is the topping chopped almonds? I love the specks of orange throughout the bread. Must be delicious with the grated parmesan cheese.

I will have to try this. I jumped back on the Keto Wagon about a week ago. We have a lot going on the next two weeks, so this delicious sounding bread will have to wait. (Bookmarking!)
I am going to also do some no grain baking experiments using a bamboo fiber flour mix.

@Granny Sue Psyllium husk is the crucial ingredient in gluten free bread baking. It acts as a binder, and it gives gluten free bread dough the elasticity, flexibility and extensibility it needs so you can actually knead and shape it without any problems. So you can't skip it, Sue.
