Old Amsterdam Salad with Radishes and Walnuts

Whether for a grill party or a lunch: this simple recipe for cheese, radish and walnut salad is ideal for a warm relaxing summer evening. If you are going to eat healthier and more salads, let's just make it more interesting, exciting and satisfying. But it's best to try the recipe and see for yourself!
Old Amsterdam is a Gouda which has been matured for 18 months. It has a deep yellow colour with a firm, waxy texture and a hint of sweetness. Use Emmentaler or Cheddar instead if desired. You can also try a mixture of different kinds of cheese.

 
  • 250 g Old Amsterdam / extra aged Gouda, diced (or Emmentaler or Cheddar)
  • 1 bunch Baby radishes, halved or quartered if large
  • 20 g Flat parsley, chopped
  • 20 g Dill, chopped
  • 120 g Salad greens (or lamb's lettuce or arugula)
  • 200 g Schmand (or sour cream or crème fraîche)
  • 1 tsp Dijon mustard
  • 2 tbsp Avocadao oil (or olive oil)
  • 1 tbsp Freshly squeezed lemon juice
  • Sea salt & black pepper
  • 100 g Walnut kernels
  1. Remove the rind from the cheese and dice. Wash the radishes, remove the ends and halved or quartered if large. Wash the herbs, shake dry, remove the coarse stalks and finely chop. Wash the salad greens and shake dry.
  2. In a bowl, mix the herbs with the schmand, mustard, oil and lemon juice. Season with salt and pepper.
  3. Heat a pan over a medium heat and toast the walnuts for 2-3 minutes until aromatic. Roughly chop the walnuts. Arrange the salad greens on a large platter, top with the radishes and cheese. Sprinkle with walnuts.

Oy, I thought the salad was from Amsterdam LOL but it turns out it is the cheese, never heard of that sort. I once had a cat called Gorgonzolla.

What a yummy, refreshing salad! My mom used to grow radishes in our garden---and we'd pull them out of the soil, brush them off and eat them without even rinsing them off, LOL.
