Raspberry Rice Pudding Slices

Ideal for afternoon tea with a cuppa or as dessert, this rice pudding slice is the perfect combination of cake and pudd. You can make the rice pudding a day before and store in the fridge after cooling down. The next day follow the recipe to finish the pudding cake. Store the baked pudding in an airtight container in the fridge for up to 3 days or freeze the rest for 2 months. Defrost overnight in the fridge, then reheat in airfryer or microwave for 2-3 minutes.
To make rice pudding, you need to use those round grain rice varieties like Comolino and Originario. Arborio rice, which is normally sold as risotto rice, is also suitable for rice pudding. In principle, you can cook rice pudding from all starchy round grain rice varieties.

 

Raspberry Rice Pudding Slices

  • 400 g Round grain pudding rice

  • 1 Vanilla bean, split and seeds scraped
  • 1l Milk
  • 400 ml Coconut milk
  • 200 g Xylitol
  • 2 Cinnamon sticks
  • 1/2 tsp Cardamom powder
  • 4 Eggs, medium
  • 100 g Butter, softened
  • 100 g Golden raisins
  • 250 g Raspberries
  1. Rinse round grain rice under running water. Split the vanilla bean down its length using the paring knife. Scrape out the seeds.
  2. In a large saucpot, combine rinsed rice, milk, coconut milk, xylitol, cinnamon sticks, cardamom powder, and vanilla seeds. Cover with a lid and place over medium-high heat. Bring to a boil, then simmer for about 30 minutes until the rice is al dente. Set aside to cool to room temperature.
  3. Preheat the oven to 180C/350F. Grease a 25 cm x 30 cm x 5cm baking dish with butter and line with baking paper for easier cleaning.
  4. Stir the eggs and butter into the rice. Fold in the golden raisins and raspberries. Spread the mixture in the prepared baking dish and bake in the middle of oven for 45-55 minutes until set. Remove the baked rice pudding, leave to cool and cut into pieces.

Bet it is very refreshing especially if eaten out of the fridge. I used to like biscuit cake soaked in vanilla plant milk during summer. We call that type of cake koh.

I was just thinking about rice pudding last week and how comforting it sounded because recently I’ve had some issues with my stomach. I’ve never thought to add raspberries to it, but I definitely like that idea. Generally, I just stick with raisins and golden raisins. I love the idea of making them into squares. I have to try this.
