This is a delicious and fun breakfast or lunch recipe with eggs and sausages. It's very much like Egg in a Hole - an egg fried in a hole in a slice of bread, but here we use sausage instead of bread. Sprinkle the top with cheese and seasoning of your choice and cook the egg to your liking.
|
- With a small, sharp knife, make a cut in each sausage lengthwise, leaving two ends intact. Crack 3 eggs in 3 small bowls.
- Melt the butter in a large skillet. Place the sausages in the pan and cook until slightly browned on both sides.
- Stretch the sausage open with a pair of chopsticks and pour one egg in each hole. Sprinkle some grated Parmesan, if using, chilli flakes, chopped parsley and black seeds over. Cook egg to your liking. You can also beaten the egg, then pour the mixture into the hole.
- Serve the eggs and sausages with your favourite side for breakfast or lunch!

I love the idea of using sausage instead of bread for Egg in a Hole. I can't wait to try this recipe for my next weekend brunch. Thank you for sharing!

Angie, This recipe is perfect for me...eggs and sausage, and I might add a bit of grated cheese too. Take Care, Big Daddy Dave
That does look delicious and a good idea too.
What a wonderful idea. The whole family is going to the beach in June. I am going to do this for breakfast on morning!
Super buenas esas salchichas que has cocinado y también muy vistosas, con lo difícil que me parece abrirlas, poner el relleno y queden tan perfectas. Una obra de arte.
Tiny but cute....i like sausage so much Angie......and filled them by that ingredients is a great idea...I'll try this recipe someday ^^
...an interesting way to have frankfurters!
I have seen it done on Facebook before, a lovely idea, also threading pieces of wieners through a spaghetti and then cooking them together LOL I sometimes buy the veggie ones from Lidl, but they are not in the regular offer.
look so cute... yummy

Wow- these are so cute! They look just like Turkish 'pide'- boat-shaped pizza!
Very creative, a hot dog never looked so good!
An unusual recipe for me but one that sounds and looks absolutely delicious! Very pleasing to the eyes. Thanks Angie!
What a great idea I will have to try that. Well done. Cheers Diane
Voilà une recette originale et appétissante ! Belle fin de soirée
Angie, I could eat that everyday. Very clever idea. Bernadette, New Classic Recipe
Surprised that each sausage can be pry open to a hole big enough to contain an egg! It takes your skill to do it. The sausage would have broke if I were the one who prep it.
Wow! These are so pretty! Not sure I can be as patient in making them, though!
