Heirloom Carrot and Cashew Salad with Salsa Verde

This easy carrot and salt & pepper cashews salad is a great mix of crunchy, zesty, tangy, and spicy. Perfect on its own or as a great addition to any barbecue. It is bursting with texture and flavour yet dead easy to prepare and super delicious and nutritious.
I used a mixture of white, deep red and purple heirloom carrots. If they aren't readily available, use regular orange carrots instead. You can either grate them or peel lengthwise into long ribbons for an even more appealing presentation. The fresh herby salsa verde really lifts the carrots to a new level.

 
Salsa Verde
  • 2 Garlic cloves
  • 3 Anchovies
  • 2 Jalapeno chillies
  • 30 g Cilantro (or flat parsley)
  • 10 g Mint leaves
  • 1 Lime, juiced
  • 60 ml Extra-virgin olive oil
  • Salt and black pepper
  • 500 g Organic heirloom carrots, grated
  • 2 tbsp Cilantro, chopped
  • 50 g Salt and pepper roasted cashews, roughly chopped
  1. Use the chopper attachment of a stick blender or a mini food processor to blitz the garlic, anchovies, chilli, cilantro, mint, lime juice, and olive oil to a finely chopped salsa verde. Taste and season with salt and black pepper.
  2. Wash the carrots, but leave the skin on. Grate the carrots using a mandoline or a food processor for speed.
  3. Toss the grated carrots with half of the salsa verde and divide it into two serving plates. Sprinkle the cashews and cilantro over. Serve with the remaining salsa verde.

wow little bit spicy from jalapeno, right...but it's nice plating as usual. Carrot with different color combine with chasew...tasty salad ^^

Those colourful carrots look so appetizing! I did once find the purple ones in a supermarket here, but they did not taste good, also dark violet bananas - the taste was the same as the normal ones. It is interesting that first carrots were tasteless and became sweet only after the medieval times. The same with oranges, which were originally bitter like grapefruit.
