Tuna Stuffed Heirloom Tomatoes

Fresh heirloom tomatoes are hollowed out, then filled with a deliciously healthy tuna salad and served on a bed of greens and herbs. These protein-packed, no cook stuffed heirloom tomatoes are great anytime of the year, but especially when fresh tomatoes are in season. They are naturally gluten free and keto-friendly. Use some homemade mayonnaise instead of Greek yoghurt if you need to go dairy free.

  • 4 Large heirloom tomatoes (I used primora striped tomatoes)
  • 1 can / 160 g Tuna in water, drained (I used Saupiquet)
  • 2 tbsp Dill stems, chopped
  • 2 tbsp Fennel, diced
  • 1 Small red onion, peeled and finely chopped
  • 1/2 tbsp Small capers
  • 2 tbsp Greek yoghurt
  • 1 tbsp Lemon juice
  • Salt and pepper to taste
  • Dill or fennel fronds to garnish
  • Pomegranate seeds, optional
  • Salad greens, optional
  1. With a sharp knife, slice 0.5cm / 1/5inch off the top of each tomato. With a spoon, scoop out the seeds and pulp. Roughly chop the pulp and place in a large bowl.
  2. Add the tuna, dill stems, fennel, red onion, capers, sour cream, lemon juice, salt and pepper. Gently toss to combine.
  3. Spoon the tuna mixture into the tomatoes. Serve with the tops on a bed of salad greens and sprinkle some pomegranate seeds over if using.

Somos mucho de tomates rellenos en verano, con ensaladilla los consumimos bastante, pero también con otros rellenos. El tuyo me ha gustado mucho.

Such a simple looking and delicious salad Angie! Lovely!

DEZMOND 6/5/23 14:23

Such lovely colour those tomatoes have! We only have the red ones in our green markets, but we used to grow the yellow ones at my farm when I was a kid.

DeniseinVA 6/5/23 14:37

I love tuna stuffed tomatoes! I make them in a slightly different way (in the Italian manner, of course!) and they're a perennial favorite in this household, especially in the summer.

Raymund 10/5/23 01:41

Your addition of dill, fennel, and capers is a perfect way to add some extra flavor and texture. Yum!

Angie, I'd have to skip the greens but tomatoes and tuna salad are definitely on my radar. It won't be long and we'll be able to find some local heirloom tomatoes in the local markets. Take Care, Big Daddy Dave
