Breakfast Sausage and Egg

This is a delicious and fun breakfast or lunch recipe with eggs and sausages. It's very much like Egg in a Hole - an egg fried in a hole in a slice of bread, but here we use sausage instead of bread. Sprinkle the top with cheese and seasoning of your choice and cook the egg to your liking.

 
  • 3 Sausages (I used frankfurters)
  • 3 Eggs
  • 1 tbsp Butter or olive oil
  • Freshly grated Parmesan, optional
  • Chilli flakes
  • Flat parsley, chopped
  • Black seeds / Nigella sativa
  1. With a small, sharp knife, make a cut in each sausage lengthwise, leaving two ends intact. Crack 3 eggs in 3 small bowls.
  2. Melt the butter in a large skillet. Place the sausages in the pan and cook until slightly browned on both sides.
  3. Stretch the sausage open with a pair of chopsticks and pour one egg in each hole. Sprinkle some grated Parmesan, if using, chilli flakes, chopped parsley and black seeds over. Cook egg to your liking. You can also beaten the egg, then pour the mixture into the hole.
  4. Serve the eggs and sausages with your favourite side for breakfast or lunch!

I have seen it done on Facebook before, a lovely idea, also threading pieces of wieners through a spaghetti and then cooking them together LOL I sometimes buy the veggie ones from Lidl, but they are not in the regular offer.

Surprised that each sausage can be pry open to a hole big enough to contain an egg! It takes your skill to do it. The sausage would have broke if I were the one who prep it.
