Mini Buffalo Mozzarella with Pistachio Pesto

The ultimate easy appetizer or party snack, the little bites of creamy, soft and squidgy mini buffalo Mozzarella balls over a bed of chunky pistachio pesto or you could tear over a ball of buffalo Mozzarella or Burrata. Serve with with crackers or crusty bread. Homemade pesto for this recipe is a must, seriously the flavour is so delicious and unlike anything you can buy in a jar and it also take no time to make.

 
  • 1 Garlic clove, peeled
  • 30 g Flat-leaf parsley plus 1 tbsp chopped to serve
  • 30 g Unsalted shelled roasted pistachios plus extra to serve
  • 30 g Parmigiano-Reggiano, grated
  • 1/2 Lemon, juiced
  • 3 tbsp Extra virgin olive oil plus extra to drizzle
  • Salt and pepper
  • 150 g Mini Buffalo Mozzarella balls, drained
  1. To make the pesto, in a pestle and mortar, smash the garlic and a pinch of sea salt into a paste. Tear in the parsley leaves and bash again until pulped, followed by the pistachios.
  2. Finely grate in Parmesan cheese, muddle in the lemon juice and 2 tablespoons of extra virgin olive oil to loosen, then season to taste, tasting and tweaking.
  3. Spoon the pesto over a serving plate. Top with the Mozzarella balls and finish with a drizzle of extra virgin olive oil, chopped pistachios and parsley leaves.

Looks totally wonderful, Angie. Recently I have been reading about cheese (which I can never get enough of and spend far too much money on ) and its benefits and drawbacks. The information is frequently contradictory. It's almost like saying that jogging is beneficial but the downside is that you will wear out the shoes. I think I will continue to indulge!

Angie, Very attractive eye-catching dish...but I've never understood the attraction of mozzarella or mozzarella buffalo cheese. Give me a nice sharp cheddar, Roquefort, Stilton or even a Brie. Question...with your dietary habits do you eat cheese? Take Care, Big Daddy Dave

David, I do eat cheese, they are from ruminant animals, so definitely carnivore. However, I do try to limit them as they are addictive and make you overeat. If I eat just meat, salt and water, then I wouldn't and couldn't overeat...with cheese, I tender to overeat without even realizing it..but I totally adore hard cheese, aged cheese and blue cheese.
