This halloumi and watermelon salad has all of the elements that a good summer salad requires. Warm, crispy, and salty grilled halloumi, sweet juicy watermelon, tangy lime juice, spicy chilli pepper, and refreshing mint make for a simple but perfect harmony of flavours. Enjoy this salad as an appetizer or even as a light lunch, Add some roasted chicken, steak, or chickpeas if you want to make it more filling. If halloumi isn't your thing, use crispy tofu instead.

- Heat your grill (or a grill pan) to high. Lay the sliced halloumi cheese in a single layer, then grill for 2 minutes on each side until golden.
- Cut the watermelon into small triangles and place in a large bowl. Slice the chilli pepper open and remove the seeds. Finely chop the chilli pepper and add to the watermelon.
- Whisk the lime juice and olive oil together and season with salt and pepper. Add the dressing to the watermelon and gently toss together. Set aside for 15 minutes.
- Arrange the arugula on a serving platter, top with watermelon and grilled halloumi slices and sprinkle the shredded mint leaves over. Enjoy!
