Halloumi, Watermelon & Mint Salad

This halloumi and watermelon salad has all of the elements that a good summer salad requires. Warm, crispy, and salty grilled halloumi, sweet juicy watermelon, tangy lime juice, spicy chilli pepper, and refreshing mint make for a simple but perfect harmony of flavours. Enjoy this salad as an appetizer or even as a light lunch, Add some roasted chicken, steak, or chickpeas if you want to make it more filling. If halloumi isn't your thing, use crispy tofu instead.

 
  • 200 g Halloumi cheese, thinly sliced
  • 1 Mini seedless watermelon
  • 1 Red chilli pepper, chopped
  • 1 Lime, juiced
  • 2 tbsp Olive oil
  • Sea salt
  • Freshly milled black pepper
  • A small bunch mint leaves, shredded
  • Arugula leaves
  1. Heat your grill (or a grill pan) to high. Lay the sliced halloumi cheese in a single layer, then grill for 2 minutes on each side until golden.
  2. Cut the watermelon into small triangles and place in a large bowl. Slice the chilli pepper open and remove the seeds. Finely chop the chilli pepper and add to the watermelon.
  3. Whisk the lime juice and olive oil together and season with salt and pepper. Add the dressing to the watermelon and gently toss together. Set aside for 15 minutes.
  4. Arrange the arugula on a serving platter, top with watermelon and grilled halloumi slices and sprinkle the shredded mint leaves over. Enjoy!

A mi me gusta esa ensalada tal y como está, quizás algo menos de picante, por lo demás está buenísima. Los quesos me gustan todos en general, dentro de una ensalada con frutas, son deliciosos.

I have to agree, this halloumi and watermelon salad sounds like the perfect summer dish!
