Raw Avocado Tart with Lime and Matcha

Dairy-free, gluten-free, and so delicious-you simply have to try this avocado tart. With a base made with nuts, soft dates, Dutch-processed cocoa, coconut flakes, and coconut oil, and a filling with ripe creamy avocado, lime, maple syrup and coconut oil, it makes the perfect refreshing summer treat! If your dates are hard, place them in a bowl of hot water for a few minutes to soften before draining them and adding them to the food processor. I garnished the tart with matcha powder, freeze-dried raspberries and coconut chips, but it's completely optional. You can also just scatter some mini white chocolate chips and lime zest over.

 
  • 200 g Almonds, chopped (walnuts, pecans, cashews or hazelnuts are all great)
  • 150 g Dried soft dates
  • 50 g Unsweetened coconut flakes
  • 45 g Dutch-processed cocoa powder
  • 40 g Coconut oil plus more for the mould
  • 500 g Avocados flesh (4-5 avocados)
  • 6-7 Limes, juiced (about 100 ml)
  • 100 g Coconut oil
  • 1 tsp Matcha powder
  • 120 ml Maple syrup (or agave)
  • Some matcha powder for garnish (optional)
  • Freeze dried raspberries for garnish (optional)
  • Coconut chips for garnish (optional)
  1. Line the base of a 20cm / 8inch springform pan with baking paper and stretch the ring around it. Grease the rim with a little coconut oil.
  2. For the base, put the almonds, dates, coconut flakes, cocoa powder and coconut oil into a food processor. Chop everything for about 5 minutes. The mixture should be slightly compact and somewhat sticky. Pour the mixture into the prepared mould and press down evenly with a spoon. Place the pan in the fridge while preparing the filling.
  3. For the filling, halve the avocados, remove the stones and scoop out the flesh with a spoon. Cut the flesh into large pieces. Halve the limes and squeeze out the juice. Puree the avocado flesh with the lime juice, coconut oil and maple syrup.
  4. Pour the filling onto the cooled base and spread evenly. Place the avocado torte in the freezer for 1 hour until chilled through. Leave at room temperature for about 10 minutes before serving. Dust with matcha, and top with freeze-dried raspberries and coconut chips, if desired.
