Crayfish and Cantaloupe Salad

This fresh and light salad makes the perfectly light and delicious meal. The sweetness of the cantaloupe compliments the rest of the ingredients seamlessly. As quick and easy as it is delicious. You can use prawns or crab meat if you can't get hold of crayfish tails. Cantaloupe can be substituted with mango, apple or berry. If you want a more satiating meal, throw in some leftover cooked pasta, roasted potatoes or grains.

 
  • 1/2 Cantaloupe, thinly sliced (or blueberries or fruit of your choice)
  • 1 tbsp Olive oil
  • 1 clove Garlic, minced
  • Zest and juice of 1/2 lime
  • Chilli flakes, to taste
  • 2 Tarragon sprigs, leaves stripped and roughly chopped
  • 150 g Cooked crayfish tails
  • 100 g Red Belgian endives, leaves separated
  • 1/2 Fennel bulb, thinly sliced
  1. Heat the olive oil over a low heat in a small frying pan, add the minced garlic and cook gently for 1 minute.
  2. Add the lime zest and juice, chilli flakes, tarragon and season well. Add the crayfish and cook for a further minute until warmed through.
  3. Arrange the cantaloupe slices, red Belgian endive leaves and fennel on a serving plate and spoon over the warmed crayfish and dressing.
