Keto Airfried Za'atar Pickles with Bloody Mary Sauce

These keto airfried pickles are so crunchy, cheesy, seriously addictive and low carb! They are breaded with a keto coating seasoned with za'atar--a Middle Eastern spice blend, and airfried to perfection in just 20 minutes. If you don't have an airfryer (you should get one), then fry them in ghee (or oil if you prefer) until golden brown and crispy. They are the tastiest party snack or appetizer served with a Bloody Mary sauce or a spicy ranch dressing. Like any fried food, these pickles taste best right after they’ve been fried. If you happen to have leftovers, simply store them in an airtight container in the refrigerator and reheat them in the airfryer or oven at 180C/350F for 5 minutes.

 
Bloody Mary SauceKeto Fried Za'atar Pickles
  • 1 tbsp Olive oil
  • 1 Shallot, peeled and chopped
  • 1 tbsp Capers in brine, drained
  • 80 ml Vodka
  • 1 tsp Celery salt
  • 400 g Can cherry tomatoes
  • 1 tbsp Worcestershire sauce
  • 1 tsp Tabasco
  • 100 g Blanched almonds, finely ground
  • 4 tbsp Parmigiano-Reggiano, finely grated
  • 2 tbsp Za'atar (a Middle Eastern spice blend)
  • 2 Large eggs
  • 2 tbsp Sour cream (or mayonnaise / Greek yoghurt)
  • 400 g Sugar free pickled gherkins, drained and patted dry
  • 80 g Parmigiano-Reggiano, finely grated, to serve
  1. For the sauce, heat the olive oil in a frypan over medium-high heat. Add chopped shallot and capers, and cook for 1-2 minutes until shallot has softened.
  2. Add vodka and simmer for 3 minutes or until reduced by two thirds. Add celery salt, tomatoes, Worcestershire sauce and Tabasco. Bring to a simmer and cook for 5 minutes or until slightly reduced. Transfer to a small food processor and whiz until smooth.
  3. In a soup bowl, combine finely ground almonds, Parmesan cheese and 1 tablespoon of za'atar. Mix until combined. In a separate bowl, whisk together the eggs, sour cream and the remaining tablespoon of za'atar.
  4. Drain the pat dry the pickles. Dip the pickles in the egg mixture, followed by the nut mixture. Repeat the process until all the pickles are battered.
  5. Lightly grease your air fryer basket and air fry at 200C/400F for 12 minutes, flipping halfway through. If you don't have an air fryer, then fry them in hot ghee (or oil if you prefer), for 3-4 minutes until golden and crisp.
  6. Serve fried pickles hot, sprinkled with finely grated Parmesan, and with the Bloody Mary sauce on the side.
