Easy Green Prawn Curry

Whip up this Thai-style green prawn curry, which is a quick and easy answer to a classic Thai curry, in just 20 minutes with storebought green curry paste, coconut milk, broth and eggplant. You can use other vegetables (broccoli, sugar peas, mushrooms or bok choy are all good) for the curry. Serve the prawns over some jasmine rice or noodles.

 
  • 1 tbsp Coconut oil
  • 1 Shallot, peeled and finely chopped
  • 20 g Ginger root, thinly sliced
  • 75 g Green curry paste (or to taste)
  • 300 g Eggplant, cut into 3cm pieces
  • 1 tin / 400 ml Coconut milk
  • 250 ml Homemade broth (or water)
  • Juice of 1 lime
  • 1 tbsp Fish sauce (or to taste)
  • 750 g King prawns, deveined, heads and tails intact (defrosted if frozen)
  • 1 Green chilli pepper, cut into rings
  • Fresh herbs (Thai basil, cilantro or flat parsley)
  1. Heat the coconut oil in a large skillet over medium heat and fry the chopped shallot and sliced ginger for 1-2 minutes until starting to soften. Add the green curry paste and cook for 2-3 minutes until fragrant. Add the eggplant and cook for 2-3 minutes, then add the coconut milk, broth or water, lime juice and fish sauce.
  2. Bring to a gentle simmer and cook for 5 minutes, then add the prawns and cook for a further 5 minutes until just cooked. Remove from the heat.
  3. Garnish the curry with fresh herbs and green chilli pepper and serve with steamed jasmine rice or noodles if desired.
