Crispy Halloumi with Zaalouk

Zaalouk is a popular Moroccan cooked salad or dip with eggplants and tomatoes seasoned with paprika, cumin, garlic, and herbs. It's versatile, delicious with bold flavours and can be served warm or cold. Traditionally, zaalouk is served with crispy bread or flatbread, but to keep it low carb, I have paired it with some crispy, pan-fried Greek halloumi that works perfectly with the flavours of the well spiced eggplants and tomatoes.

 
  • 2 Large eggplants, halved
  • 3 Large tomatoes, finely chopped
  • 4 Garlic cloves, peeled and finely chopped
  • 5 tbsp Olive oil, plus extra for drizzling
  • 2 tbsp Tomato paste
  • 2 tsp Cumin powder
  • 2 tsp Paprika powder
  • 1/2 tsp Dried chilli flakes
  • 1 Bay leaf
  • 100 ml Broth or water
  • 1 tbsp Lemon juice
  • 2-3 tbsp Coriander, finely chopped
  • 300 g Halloumi, cut into ½ cm slices
  1. Trim the stems from the eggplants and cut them in half lengthwise. Arrange the eggplant halves skin side up on a baking sheet lined with aluminum foil and place it directly under the broiler. Roast the eggplants for about 30 minutes, or until the skins are charred. Remove and leave to cool. Once cool, remove and discard the burnt skin. Finely chop the flesh.
  2. Meanwhile, finely chop the tomatoes and garlic. Heat 3 tablespoons of olive oil in a large pan over a medium heat. Add the garlic and cook for 30 seconds until fragrant. Tip in the tomatoes, tomato purée, cumin, paprika, chilli flakes, bay leaf and broth or water. Mix well and bring it to a boil. Cover, reduce the heat and simmer for 10-12 minutes, stirring occasionally, or until the tomatoes have broken down.
  3. Tip the chopped eggplants into the sauce and season. Cover and cook for a further 10-12 minutes, stirring occasionally, or until the sauce is thick. Add the lemon juice and coriander, and mix together.
  4. Heat the remaining 2 tablespoons of olive oil in a frying pan and fry the halloumi for 1-2 minutes each side until golden and crisp.
  5. To serve, spread the zaalouk in a serving dish and top with halloumi. Give a final drizzle of olive oil and serve immediately.

We enjoyed zaalouk in many different restaurants in Morocco last month. I was very lucky that, in quite a few places - especially the riads where we stayed, the chefs were willing to accommodate my allergy to garlic so that I could try this wonderful dish. I now look forward to making your version with the halloumi! (Could it be that I can finally comment???)

I'm not sure that I would like Halloumi, however the salad/sauce combination looks good and sounds yummy, so I might try it with chicken instead :)
