Parsnip Chips with Chilli Salt

These parsnip chips make a great alternative to storebought potato chips and dip, and are irresistible with a sprinkling of chilli salt and homemade tzatziki sauce. Best eaten on the day they are made, as they can lose their crispiness. If you don't want to fry them, then toss the ribbons with 1 tablespoon of olive oil and bake at 180C/350F for 20-25 minutes. You might have to do this in a few batches.

Chilli Salt
  • 1 kg Ghee, lard or oil, to deep-fry
  • 2 / 400 g Parsnip, peeled into ribbons
  • 1 tbsp Parsley, finely chopped
  • Tzatziki, optional
  • 1 1/2 tsp Sea salt
  • 1/2 tsp Finely grated orange rind
  • 1/2 tsp Chilli flakes
  • 1/4 tsp Ground cumin
  1. To make the chilli salt, combine the sea salt, orange rind, chilli flakes and cumin in a small bowl.
  2. Use a Y-shaped vegetable peeler to peel long thin ribbons from the parsnips.
  3. Heat the ghee in a large deep frying pan over medium-high heat. Deep-fry the parsnip, in batches, until golden and crisp. Use a slotted spoon to transfer to a baking tray lined with paper towel. Sprinkle with chilli salt and chopped parsley. Serve chips with tzatziki if using.

I like parsnips, my wife doesn’t. Maybe she’d try parsnip chips!

Interesting use of parsnips. I am from the South and we like anything that has been fried.

Angie, I just tried fried palsternacka (parsnip) for the first during the holidays and loved them. I love the baked recipe tip and the chili salt sounds like a perfect paring.

Angie, chilli salt is easy to prepare by processing salt with chilli and then drying in the oven. I'll make it with mild hot pepper..

@Anonymous It's listed on the ingredient list, 2 parsnips, about 400grams, but you can make as many as you want.

Hi Angie, I like parsnips but my better half doesn't. I think I'd really enjoy these chips! So you have about 10" of snow...a bit more than we do. Is it an unusual amount of snow for you? Is it actually illegal to feed birds where you live? I do understand the thought behind such a law but it would make my wife very unhappy if she couldn't feed and water the birds. I did find that it is illegal to feed them in Bergen Norway...and other countries and local governments discourage feeding birds. I learn something new every day. Take Care, Big Daddy Dave

@David We usually just get a few cm, not more than 10. I am not quite sure it's illegal to feed birds as I still see some neighbours do, but it's advised NOT to feed them.

These look so good. Do they stay crisp for a while?

[Reply]
Angie's Recipes 20/1/24 05:13

@Balvinder The parsnip chips stay at least 2 days crispy. On the 3rd day, I just put them in the airfryer for 30 seconds, and they are very crispy again.

I think parsnips are one of the most under-used vegetables. I love their subtly sweet flavor and making chips with them is brilliant. :-) ~Valentina

I love parsnips, and when I used to get Terra Chips, parsnips were my favorite. I do not deep fry very often, but this might be a good exception to make! David (C&L)
