Tuna Stuffed Heirloom Tomatoes

Fresh heirloom tomatoes are hollowed out, then filled with a deliciously healthy tuna salad and served on a bed of greens and herbs. These protein-packed, no cook stuffed heirloom tomatoes are great anytime of the year, but especially when fresh tomatoes are in season. They are naturally gluten free and keto-friendly. Use some homemade mayonnaise instead of Greek yoghurt if you need to go dairy free.

 
  • 4 Large heirloom tomatoes (I used primora striped tomatoes)
  • 1 can / 160 g Tuna in water, drained (I used Saupiquet)
  • 2 tbsp Dill stems, chopped
  • 2 tbsp Fennel, diced
  • 1 Small red onion, peeled and finely chopped
  • 1/2 tbsp Small capers
  • 2 tbsp Greek yoghurt
  • 1 tbsp Lemon juice
  • Salt and pepper to taste
  • Dill or fennel fronds to garnish
  • Pomegranate seeds, optional
  • Salad greens, optional
  1. With a sharp knife, slice 0.5cm / 1/5inch off the top of each tomato. With a spoon, scoop out the seeds and pulp. Roughly chop the pulp and place in a large bowl.
  2. Add the tuna, dill stems, fennel, red onion, capers, sour cream, lemon juice, salt and pepper. Gently toss to combine.
  3. Spoon the tuna mixture into the tomatoes. Serve with the tops on a bed of salad greens and sprinkle some pomegranate seeds over if using.

How rich are stuffed tomatoes , ideal to eat in summer. Around here they are one of the main dishes of Christmas Eve dinner.
