Carrot and Beansprout Salad with Ginger Vinaigrette

If you are looking for a vibrant, light and delicious salad packed full of nutrients and flavour, this is the right recipe for you. If desired, add some sliced apples (Honeycrisp, Fuji, or Gala) for a fruity and sweet note. It's naturally gluten free, dairy free and comes together in 15 minutes.

 
SaladGinger Vinaigrette
  • 2 tbsp Sesame seeds, toasted
  • 500 g Carrot, peeled and coarsely grated
  • 100 g Beansprouts, rinsed and dried
  • 3 stalk Spring onions, chopped
  • 2 tbsp Chives, chopped (or cilantro)
  • 2 tbsp Freshly squeezed lemon juice
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Toasted peanut oil
  • 1 tbsp Toasted sesame oil
  • 1 tbsp Finely grated fresh organic ginger
  • 2 tsp Honey (or maple syrup)
  • Salt & freshly ground black pepper
  • 1 tsp Chives, chopped, optional
  1. Place sesame seeds in a non-stick frying pan over medium heat and cook, stirring, for 2-3 minutes or until lightly toasted. Remove from heat and set aside.
  2. To make the dressing, combine the lemon juice, apple cider vinegar, peanut oil, sesame oil, grated ginger and honey in a screw-top jar. Taste and season with salt and pepper. Secure the lid and shake to combine. Stir in 1 teaspoon of toasted sesame seeds and chopped chives if using.
  3. Place the remaining toasted sesame seeds, grated carrot, beansprouts, chopped spring onions and chives (or cilantro) in a salad bowl. Drizzle with the dressing and gently toss to combine.

This recipe is the answer to my prayers, or at least, frustrated cries! I always end up with way too many beansprouts leftover when I use them, and never have any ideas for secondary dishes. This one looks like a real winner to keep in the files.
