Belgian Endive Kumquat Salad with Pomegranate and Feta

Bitter endives, distinctly citrusy kumquats, sweet and sour pomegranate and briny Feta form the basis of this salad full of intense flavours. A fabulous salad or light lunch. Besides Feta, the endives pairs really well with blue cheese too.
The bitter substances in Belgian endives stimulate the production of bile in the liver and digestion, especially of fats. They also prevent cravings by curbing the appetite.

 
SaladDressing
  • 1-2 head Red Belgian endive
  • 1-2 head Yellow Belgian endive
  • 1 Red onion, peeled and sliced
  • 200 g Kumquats, sliced into 1/8-inch rounds, seeds removed
  • 80 g Feta
  • 150 g Pomegranate arils (1 large fruit)
  • Fresh mint leaves
  • 150 g Full fat Greek yoghurt
  • 1 tsp Hot mustard
  • 4 tbsp Lemon juice
  • 1 tbsp Fresh mint leaves, chopped
  • Salt and black pepper
  1. For the dressing, whisk together the yoghurt, mustard, lemon juice and mint leaves together. Taste and season with salt and pepper. Chill until ready for use.
  2. Trim and divide the Belgian endives into individual leaves, cutting out the stalks. Arrange the leaves in a fan shape on a plate. Place sliced red onion, sliced kumquats and pomegranate arils on top of endive leaves.
  3. Crumble the feta over the salad and decorate with a few mint leaves. Serve the dressing on the side.

This salad truly dares to offer taste ! And looks - starting with a gutsy green and inviting pomegranate and kumquats into the fray . . . cannot always get them att the same time at my local Down Under supermarket but will have your recipe ready when I do !
