Smoked Salmon Salad with Lemon Dill Dressing

With distinctively nutty mâche, delightfully sharp and bitter radicchio, sweet mandarin, rich smoked sockeye salmon and creamy, herby lemon dressing, this keto-friendly, gluten-free salad is chock-full of fresh flavours, crunchy and juicy textures, and essential nutrients. I have also added some leftover trout caviar to the salad, but it's completely optional. Instead of mâche, you can also use arugula, baby beet greens, spinach or simply a mesclun mix.

 
Lemon Dill DressingSalad
  • 3 tbsp Freshly squeezed lemon juice
  • 4 tbsp. Homemade mayonnaise
  • 2 tbsp Finely chopped fresh dill
  • 1 tsp Dijon wholegrain mustard
  • 1 tbsp Extra-virgin olive oil
  • Salt and pepper to taste
  • 100 g Mâche
  • 50 g Radicchio, cut into bite-sized pieces
  • 1-2 Mandarin
  • Cherry tomatoes, halved (optional)
  • 80-100 g Smoked sockeye
  • 1 tsp Trout caviar (optional)
  • Lemon wedges, to serve
  1. To prepare the dressing, combine lemon juice, mayonnaise, dill, wholegrain mustard and olive oil in a glass jar. Whisk well to combine. Taste and season with salt and pepper.
  2. Divide mâche and radicchio between 2 salad plates. Top with mandarin, halved cherry tomatoes if using, torn smoked salmon and caviar. Garnish with extra dill. Drizzle the dressing over. Serve with lemon wedges.

Love the look of this salad and the dressing - shall prepare soonest. And a relatively small amount of the fish does go a long way ! I may have mentioned before we can buy larger packets of smoked salmon offcuts by the same firms at a far, far lower price . . . available at all supermarkets . . . ideal for salads like these, pasta dishes, fish cakes et al. Oh - love the amount of dill also . . . as I do not get snow where I live there are always large pots of dill growing behind the kitchen door . . .

En casa tampoco faltan las ensaladas, cuando van con proteína, como en este caso, nos sirven como plato único, con poco más estamos comidos. Y muy bien además.
