Salads are not just good for the warm weather. They can also be enjoyed at any other time of year, even the chilly season. They are packed with vitamins and nutrients if done right. The apple and fennel salad with pecans is a wonderful accompaniment to roast meat or fish. The simple dressing with olive oil, lime juice and apple juice also goes well with many other salads. If you like it a little creamier, you can also stir in a tablespoon of cream. Instead of pecans, you can also use walnuts, or almonds for the salad.
The beautiful fennel, native to the Mediterranean cuisine, is often overlooked by home cooks. The versatile bulb has virtually no calories, but is packed with valuable minerals such as calcium, phosphorus, sodium and potassium, which can help improve digestion, lower blood pressure, and strengthen the immune system.

- Clean the fennel, cut off the roots and green stalks. Quarter the bulbs lengthways and cut into thin slices. Wash salad leaves, shake dry and cut into bite-sized pieces.
- Wash and quarter the apples, remove the core and cut into thin slices. Put them ina bowl and immediately sprinkle some lime juice over, so they won't turn brown. Peel the shallot and cut into fine rings.
- Mix the remaining lime juice, the apple juice with salt and pepper until the salt crystals have dissolved. Stir in the olive oil.
- Arrange the salad leaves, fennel, apple slices and onion on two plates. Whisk the dressing again, drizzle over the salad, fold in the pecans and serve immediately. If you like, you can grate some fresh Parmesan on top.

I do not do apples and fruit in salads, but they are defo a healthy meal in these cold weather. I like to eat my apfels in the afternoons as a dessert.
