Sweet Potato Curry with Green Beans

Curry is something special and so versatile that cooking and eating it never gets boring. They are a little reminiscent of stews and taste particularly good when served warm with rice or flatbread. You can add some chickpeas or chicken to your curry so that you don't miss out the proteins. It's a super-easy recipe to make and perfect for weeknight dinners.

 
  • 600 g Sweet potatoes, peeled and cut into bite-sized cubes
  • 1 Brown onion, peeled and chopped
  • 1 Large garlic clove, peeled and chopped
  • 1 tbsp Finely chopped fresh ginger
  • 200 g Green beans
  • 2 tbsp Coconut oil
  • 2 tsp Curry powder
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tesp Garam masala
  • 250 g Tomatoes, chopped
  • 250 ml Vegetable stock
  • 200 ml Coconut milk
  • Sea salt and freshly milled black pepper
  • 1 tbsp Cilantro, chopped
  • 2-3 Fresh chilli, halved
  1. Peel and cut the sweet potatoes into bite-sized cubes. Peel and chop the onion, garlic and ginger. Wash and dry the green beans.
  2. Heat coconut oil in a saucepan over high heat. Add the chopped onion and saute for a minute. Reduce heat to medium-low and add in garlic and ginger. Stirfry for a further minute or until aromatic. Add curry powder, turmeric and garam masala and cook, stirring, for 1 minute.
  3. Add sweet potato, green beans and chopped tomatoes. Stir until coated. Pour in vegetable stock and coconut milk. Bring to the boil over high heat. Reduce heat to medium-low. Simmer for 20 minutes or until sweet potato and green beans are tender. Taste and season with salt and pepper.
  4. Garnish with chopped coriander and chilli halves. Serve with flatbread or rice.
