These Himmelsboten are not only popular with the little ones. My husband is also completely addicted to these cookies. I used a simple and very basic 3-ingredient shortcrust pastry, but you can add some orange peels or vanilla extract. Cut it out and then decorate with sugar icing and chocolate lentils or almonds if you want a healthier alternative. They are a delicious creation for the Christmas season. There are only two other things to note. The prongs of the stars should be at least three centimetres long so that you can wrap the Smartie or almond well. And you need a star or snowflake cookie cutter with five prongs so that the celestial messengers look like a humab figure.

 
  • 200 g White spelt flour (German #630)
  • 140 g Kerrygold unsalted butter
  • 60 g Powdered sugar
  • Smarties or M&M
  • Chocolate glaze
  • Red sugar glaze
  1. Place the spelt flour, butter and icing sugar in a bowl and with your hands, mix all the ingredients into a smooth dough, shape into a ball, wrap in cling film and chill for an hour or 20 minutes in the freezer if you are short on time.
  2. Preheat the oven to 180C/350F. Line two baking trays with baking paper.
  3. Lightly flour your work surface. Remove the dough from the fridge and roll out to a thickness of 3 to 4 mm. Cut out stars and place on the prepared baking trays. Place a Smartie in the centre of each star and fold an ‘arm’ over it.
  4. Bake in a hot oven for 9-11 minutes. Leave to cool completely. Draw a face using the chocolate glaze for eyes and red sugar glaze for mouth.

Hi Angie, Great looking Christmas cookies. I've never seen these before but I could easily devour a half dozen or so at a single setting. As for restaurant food being expensive here in the USA, you are correct. Even a decent sit down restaurant hamburger will run from $11.95 to $14.95 with French fries. After that sales tax is added on (5% to almost 10% depending on the state and city), a 20% tip is expected and some places add on a fee if you use a credit card too. Take Care, Big Daddy Dave
