British flapjacks, aka cereal bars or oat bars, are made from oats, golden syrup, butter, and sugar. They are quick, easy to make and budget friendly. The variations on the traditional recipe are endless and this one is based on the recipe I found on BBC Good Food. I replaced the sugar with erythritol and used pomegranate syrup instead of golden syrup. You can use any seasonal fruit you have to make these flapjacks, such as cherries and apricots and experiment with different nuts or seeds. They are great for breakfast on the go, lunch boxes, picnics or afternoon tea.

- Heat the oven to 180C/350F. Butter a 20cm square cake pan and line with baking parchment. Combine the flour, baking powder and oats in a large bowl. Set aside.
- Tip the butter, erythritol and pomegranate syrup into a saucepan over a medium-low heat and stir for a few minutes until just melted. Remove from the heat and pour into the dry ingredients, then stir to combine.
- Spoon half the crumble mixture into the prepared tin, pressing it down in an even layer and making sure the surface is level.
- Scatter over the hazelnuts and blackberries, then spoon over the remaining crumble mixture – no need to level it out too much. Bake for 30 minutes until golden, then leave to cool in the tin for 10 minutes. Cut into squares to serve.
