Delicious, easy and healthy cookies with spelt, oat, hazelnuts and chia seeds. These refined sugar free treats, sweetened with date syrup and dates, are crunchy and slightly gooey on the inside. With these cookies you will have a perfect snack for days at any time of the day.
|
- Preheat oven to 180C/350F. Line a large baking tray with parchment paper.
- Place dates in a small heatproof bowl, cover with boiling water and let stand for 10 minutes. Drain. Using a food processor or infusion blender, process the drained dates, coconut oil and date syrup together until well combined. Mix in egg and vanilla extract.
- In a mixing bowl, whisk together the ground hazelnut, spelt flour, oat flour and chia seeds together. Add in date mixture and mix until well combined. Stir in chocolate chips.
- Using damp hands, shape tablespoons of the mixture into balls, place on the prepared tray. Using the back of a damp fork, gently press down each cookie to 6cm rounds. You should have 24 cookies.
- Bake in the middle of hot oven for about 15 minutes or until cookies can be gently pushed without breaking. Cool on the tray, then transfer to a wire rack to cool completely. Store the cookies in an airtight container for up to 4 days.

what a wonderful unique flavor to these cookies ... they look so delicious!
...they look like a sweet treat.
Con esos ingredientes, las galletas son riquísimas, de eso estoy segura. Me comería dos o tres ahora mismo.
Bet they taste heavenly and crunchy! Would omit chocolate chips if they have sugar in them, but dates are the god for me. I often use raisins too with a bit of honey to sweeten up my raw sweets. This week I have put strawberry instant oatmeal powder to give my energy balls some nice flavour.
Yummy
You certainly are creative in your combination of flavors.
I've got a weakness for Chia seeds. I believe everything with these seeds is tasty and beneficial.

Angie, We've never made and baked goods with dates or chia seeds... These muffins do look good though. Take Care, Big Daddy Dave
Sugar free is good
These cookies are a game-changer! I couldn't believe something so delicious could be this healthy. The hazelnuts and chia seeds give them a satisfying crunch, and the date syrup adds the perfect amount of sweetness without any refined sugar.

Those look really good!
The aroma of coconut oil while it's baking and the nutty fragrance of hazelnuts and natural sweetness of dates - who needs refined sugar when we have your healthy baked cookies and munchies? :D
