Refined Sugar Free Hazelnut Chia Cookies

Delicious, easy and healthy cookies with spelt, oat, hazelnuts and chia seeds. These refined sugar free treats, sweetened with date syrup and dates, are crunchy and slightly gooey on the inside. With these cookies you will have a perfect snack for days at any time of the day.

 
  • 80 g Fresh dates, pitted
  • 60 g Coconut oil, at room temperature
  • 170 g Date syrup
  • 1 Egg
  • 2 tsp Vanilla extract
  • 200 g Ground hazelnuts
  • 125 g White spelt flour
  • 100 g Oat flour
  • 50 g Chia seeds
  • 1 tsp Cinnamon powder
  • 100 g Chocolate chips
  1. Preheat oven to 180C/350F. Line a large baking tray with parchment paper.
  2. Place dates in a small heatproof bowl, cover with boiling water and let stand for 10 minutes. Drain. Using a food processor or infusion blender, process the drained dates, coconut oil and date syrup together until well combined. Mix in egg and vanilla extract.
  3. In a mixing bowl, whisk together the ground hazelnut, spelt flour, oat flour and chia seeds together. Add in date mixture and mix until well combined. Stir in chocolate chips.
  4. Using damp hands, shape tablespoons of the mixture into balls, place on the prepared tray. Using the back of a damp fork, gently press down each cookie to 6cm rounds. You should have 24 cookies.
  5. Bake in the middle of hot oven for about 15 minutes or until cookies can be gently pushed without breaking. Cool on the tray, then transfer to a wire rack to cool completely. Store the cookies in an airtight container for up to 4 days.

Bet they taste heavenly and crunchy! Would omit chocolate chips if they have sugar in them, but dates are the god for me. I often use raisins too with a bit of honey to sweeten up my raw sweets. This week I have put strawberry instant oatmeal powder to give my energy balls some nice flavour.
