Bobotie South African Casserole

Bobotie (pronounced ba-boor-tea) is a much-loved casserole with curried ground beef at the bottom and a thin layer of egg custard on top, that originated in South Africa in the 17th century. Bobotie is recognized as South Africa's national dish. With spice influences introduced by the Cape Malay community, who are descendants of Indonesia and Malaysia.
For bobotie, a mixture is first prepared from beef mince, onion, ginger and garlic, then flavoured with curry paste, numerous spices, sultanas, and sweet mango chutney for a delicious finish, before being filled into a casserole dish, poured with custard cream and baked in the oven until golden and crispy. The result should be a balance between spicy and sweet with a fruity note.

 
  • 1 Dinner roll, cut into smaller pieces
  • 180 g Whole milk
  • 1 Large onion, peeled and diced
  • 20 g Ginger root, peeled and minced
  • 2 tbsp Butter
  • 2 Garlic cloves, peeled and finely chopped
  • 800 g Beef mince
  • 2 tbsp Madras curry paste
  • 1 tsp Dried thyme leaves
  • 1 tsp Cinnamon powder
  • 1/4 tsp Cloves, ground
  • 1/3 tsp Allspice, ground
  • 2 tbsp Mango chutney
  • 3 tbsp Sultanas
  • 2 tbsp Lime juice
  • 6 Bay leaves
  • Salt and freshly milled black pepper
  • 2 Large eggs
  1. Heat oven to 180C/350F. Pour the milk over the bread and set aside to soak.
  2. Meanwhile, fry the chopped onion and ginger in the butter, stirring regularly for 5 minutes until they are soft and starting to colour. Add the garlic and beef mince and stir well, breaking up mince with a wooden spoon, for 10 minutes or until browned.
  3. Stir in the curry paste, thyme, spices, chutney, sultanas, lime juice and 2 of the bay leaves with 1 tsp salt and plenty of freshly milled black pepper. Cover and simmer for 10 minutes.
  4. Squeeze the milk from the bread, saving the milk for the topping. Add the bread to the meat mixture and stir until well blended.
  5. Transfer beef mixture to an ovenproof baking dish, pressing down on the mixture to create a flat surface.
  6. Whisk together the reserved milk and eggs, and season. Pour over the meat and top with the remaining bay leaves. Bake for 35-40 minutes until the topping is set and starting to turn golden. Serve with extra chutney, a side salad and rice if desired.

This dish was almost universally on the menu when we visited South Africa. Back then we ate much more meat and had it a couple of times. It was pretty good too.

I think Angie is delicious. I see that you have 2 preparations that we already know. When I read it I saw that it said custard in the translation. I thought it couldn't be. I kept reading and I see that it is what is called "flirting" around here and it is used to join ingredients: eggs, milk or cream and condiments.
