With just 15 minutes preparation, a few pantry ingredients and an overnight chill, this tropical slice will have you coming back for more, time and again. It is easy to make, has a delicious buttery base and will satisfy the sweetest craving. Instead of making the base from the scratch, you can also use butter cookies or digestive cookies to line the pan, then pour over the topping and bake.
Base | Topping |

- Preheat oven to 180C/350F. Brush a 18-21 cm / 7-8 inch pan with melted butter to grease. Line the base and sides with baking paper, allowing the sides to overhang.
- Cut the vanilla pod in half lengthways and scarpe out the seeds with the point and edge of a sharp knife.
- Using an electric beater, beat the butter, sugar and vanilla seeds in a bowl until pale and creamy. Beat in the egg. Fold in the plain flour, baking powder and coconut milk until combined.
- Scrape the mixture into the prepared pan. Use the back of a metal spoon to spread and press evenly over the base of the pan. Bake for 20 minutes.
- Meanwhile, whisk the sweetened condensed milk, lime juice and passionfruit pulp in a large jug until smooth and well combined. Pour the condensed milk mixture over the base.
- Bake for 15 minutes or until firm to the touch. Set aside to cool completely. Chill overnight (or at least 4 hours if you can't wait). Garnish with lime zest and mint leaves. Cut into slices to serve.

What a yummy cake with fruity flavors!
Este plato parece delicioso y sumamente apetitoso es un postre exquisito.
That's sure pretty, and tasty too I'm sure.
Looks good
Se ve muy rico y fácil . Gracias por la receta. Te mando un beso.
...yum!
I bet that is delicious.
An excellent dessert to keep in the fridge and grab slices of!
Looks lovely, love the combo of yellows and greens in the photos!
Sadly we do not have either passion fruit nor condensed milk here. Due to the heavy rainfalls this spring even cherries and strawberries are hard to find and we won't have any apricots probably at all. And the prices are insane, just paid two freaking euro for a kilo of carrots! Not even the fresh spring ones.
Este dulce tiene un aspecto extraordinario, seguro que es un placer para el paladar.
Un beso.
Looks like a yummy treat, thanks for sharing!
Have a happy weekend!
What a perfect summertime dossert...very tropical and delicious. Karen (Back Road Journal)

These sound great also Angie. And very easy. And something my daughter might like. I'm going to print this recipe off also so next time she comes home I can make this. Have a great weekend-or rest of it. hugs-Erika

Very tasty and I love limes.
Angie, This not only sounds good, it also looks good! I don't believe that I've ever eaten passion fruit and don't recall seeing it in the stores. Take Care, Big Daddy Dave

look tasty.....
thank you for sharing recipe...
A tasty combination of flavours and I quite like the idea of making the base from digestive biscuits as an alternative! :)
These slices look wonderful - so fresh and luscious (and happy!) Pastel me a slice or five please :)
I can already see myself enjoying a slice of this tropical treat, savoring the buttery base and the burst of citrus and tropical flavors from the topping. Thank you for sharing this delicious recipe!
I absolutely adore passion fruit. The scent alone makes me happy. Love the cake! :-) ~Valentina
Without the base, I'm actually thinking of of passionfruit lime sorbet. Weird, I am.But am associating combo of passion fruit and lime to be something like a "palate cleanser" cos it's just so refreshing.
