Roasted Purple Sweet Potatoes with Ras el Hanout Chickpeas and Spicy Tahini

A delicious, colourful and filling dinner or snack that you can feel good about eating. Swap the chickpeas for quinoa or lentils if you prefer.
Not just a treat for the eyes, vibrant purple sweet potatoes are a nutritional powerhouse. To reap the full health benefits, consider eating your sweet potatoes, skin and all since the skin contains three times as much anthocyanin - an antioxidant responsible for the brightly hued flesh of the this root vegetable, as its starchy flesh.

 
Spicy Tahini Dressing
  • 2x350-450 g Purple sweet potatoes, scrubbed
  • 400 g Cooked chickpeas (homemade or in can), drained and rinsed
  • 1 tbsp Olive oil
  • 1 tbsp Ras el Hanout (or curry or garam masala)
  • 1 tbsp Chopped parsley
  • 4 tbsp Tahini
  • 3 tbsp Lemon juice
  • 4-5 tbsp Water
  • 1 Garlic clove
  • 1 tsp Maple syrup
  • 1/2 tbsp Sriracha (or to taste)
  • Salt and pepper
  1. Preheat oven to 180C/350F. Use a fork to poke holes into the sweet potatoes, and set them on a baking pan lined with aluminum foil for easy cleaning. Bake the sweet potatoes for about 2 hours until tender.
  2. Blend all the ingredients for the dressing until well combined. Add more water as needed to reach desired consistency. Refrigerate until ready for use.
  3. Toss the chickpeas with olive oil and ras el hanout until thoroughly combined. Place them in a baking tray.
  4. When sweet potatoes are done, remove from the oven. Increase oven temperature to 200C/400F. Bake the chickpeas for 20-25 minutes, shaking 2-3 times to ensure even baking. Remove and toss with parsley.
  5. Cut a slit lengthways in each without cutting all the way through. Open slightly and fluffy the insides with a fork to create a ‘bowl’. Fill with the prepared chickpeas and drizzle with spicy tahini dressing.

I have never found purple sweet potatoes. I always buy orange ones. The dark color makes the dish look dramatic!

I've no idea what hanout is, but antioxidants are my fave thing next to flavonoids and immuno modulators. Also omega fatty acids which I get from my daily dose of flax and chia. Food can change your health fully if taken right and it is funny how people usually avoid the healthiest things. I currently love how oat, corn, millet and buckwheat flours keep my insulin levels balanced, unlike wheat flour which gives people a sugar jump.

Angie, talk about a healthy sweet potato! My mom used to tell me all the time growing up, the vitamins are in the skin, eat it up. I like the chickpeas and the tahini in this recipe. A nice twist on a sweet potato.

Sadly I have never found a purple sweet potato at my local stores, but I would buy one immediately if I ever do! I will have to try this with a regular sweet potato, however. I LOVE roasted chickpeas! Fantastic recipe!! 🌞
