Avocado Salad with Garlicky Anchovy Vinaigrette

The tangy, garlicky anchovy dressing is fantastic with creamy, buttery avocado, crispy red lettuce and tender red radish cress. The dressing really brings the boring lettuce salad to life and it packs full of flavours. Plus it just takes 15 minutes to prepare. If desired, add some prawns or smoked salmon for the protein boost.

 
Anchovy Garlic VinaigretteSalad
  • 6 Anchovy fillets in olive oil
  • 2 Large garlic cloves, peeled and chopped
  • 1 tbsp Red wine vinegar
  • 1 tbsp Lemon juice
  • 1 Small red onion, finely chopped
  • 2 tsp Dijon mustard
  • 1 tsp Sea salt
  • 6 tbsp Extra virgin olive oil
  • Freshly milled black pepper
  • 1 head Salad leaves of your choice (I used Salanova red butter lettuce)
  • 1 Red onion, peeled and thinly sliced
  • 3 Avocados, peeled and halved
  • 2 tbsp Cilantro (or parsley, mint) chopped
  • Red radish cress
  1. Put anchovy fillets, garlic cloves, red-wine vinegar, lemon juice, red onion, Dijon mustard, and coarse salt in a blender. Let stand 10 minutes. With blender running, pour in extra-virgin olive oil in a slow, steady stream and blend until emulsified. Season with freshly ground pepper.
  2. Place the salad leaves and sliced red onions in a large serving platter and dress with 2 tablespoons of the vinaigrette.
  3. Halve and pit the avocados. Carefully peel off the skin and place them, cut-side up, on the dressed salad. Spoon a teaspoonful of the vinaigrette into each avocado half. Sprinkle chopped cilantro and cress on top.

Wow looks yummy! Avocado with anchovy sauce is a new for me....but in a great idea...I usualy eat anchovy just with rice and fried peanut ^^

La vinagreta le da una nueva vida a la ensalada. En casa nos encanta el aguacate, por eso en este caso que tiene tanto protagonismo, será la ensalada ideal para nosotros.

I usually have my avocado as-is. Recently, my friend prepared avocado with a wee bit of soy sauce and I enjoyed it! So I am so sure this avocado salad with salty garlicky anchovy dressing - the balance of earthy, nutty, savory will be superb.
