Baklava is a very popular Turkish, Greek, and Middle Eastern pastry made with layers of crispy phyllo pastry and a cinnamon nut mixture drenched in an indulgent syrup or honey. It can be made with pistachios, walnuts, hazelnuts or a combination of nuts, and can include cardamom, cinnamon, and rose water.
This Pistachio Baklava Cake is a twist on traditional baklava by turning the classic nutty filo pastry dessert into a layered cake with a rich whipped mascarpone cream. It has all the wonderful spices, rose water, and crunch of pistachios and walnuts. Deliciously moist and fragrant, topped with crisp filo pastry and soaked in a tangy sticky syrup. You can made the pudding cream ahead of time and store in the fridge for up to 3 days and use regular milk instead coconut milk if desired, and flavour it with vanilla or rose water. This easy Berry Crumble is loaded with juicy berries and topped with a sweet nutty buttery topping. Serve it warm with a scoop of vanilla ice cream, whipped cream, custard sauce, or just simply with a dust of confectioner's sugar.

With a base made with nuts, soft dates, Dutch-processed cocoa, coconut flakes, and coconut oil, and a filling with ripe creamy avocado, lime, maple syrup and coconut oil, it makes the perfect refreshing summer treat! If your dates are hard, place them in a bowl of hot water for a few minutes to soften before draining them and adding them to the food processor. I garnished the tart with matcha powder, freeze-dried raspberries and coconut chips, but it's completely optional. You can also just scatter some mini white chocolate chips and lime zest over.

A cobbler is a deep-dish fruit dessert typically consisting of a fruit base and a slightly sweet biscuit topping or pie dough topping. Traditionally the fruit stew is the base for the topping, but variations can include the biscuits on the bottom, and some even use batter in place of biscuit dough. The common belief is that the name came from the biscuit topping’s resemblance to cobblestones. The ideal cobbler topping should be light and fluffy underneath, to soak up all those juices, but firm and golden crispy on the top.
You can make a cobbler from any type of fruit. Use a single type, or experiment with different combinations of your favourites. Frozen fruit is also fine, but make sure it is properly thawed before you use it. Serve the cobbler warm, with a scoop or two of good vanilla ice cream.

These 100% rye muffins are moist, hearty, super delicious and bursting with berry goodness with just a touch of sweetness from Lindt white chocolate and xylitol. They are quick and very easy to prepare. The most important rule to follow when you bake muffins is to NOT OVER MIX the batter (just mix until the ingredients are moist, no need to stir until lump free and smooth) and you will have some fluffy muffins for either breakfast, afternoon snack or any time you crave a sweet treat. Use fresh berries if you can, otherwise, don't thaw the berries. You can prepare the batter in advance and let it rest overnight, covered in the fridge, next morning you divide the batter among the muffin liners and bake for breakfast. It's convenient and chilling the muffin batter also helps to improve the flavour and make them more fluffy and moist.

These sweet little shortbread cookies are such a simple bake - they're great for afternoon tea parties or as a dessert with some strong coffee. The intense tart flavour of freeze dried raspberries offsets beautifully the sweetness of the vanilla glaze.
Shortbread cookies contain a higher butter content and less sugar than butter cookies. Traditionally they are usually baked at lower temperature and should be not crisp but pale, tender and melting.
Organic freeze-dried raspberries contain 100% raspberries, no colouring, flavouring or sugar. They are great for smoothies, cereals, as a snack or toppings. I bought mine from DM drugstore. You should be able to find them in most grocery stores or Amazon.
