Blackberry and Lemon Tartlets

A sweet and tangy fruit tart made with tangy lemony frangipane, a delicious tart filling made with ground almonds or other nuts and seeds. The addition of blackberries and lemon gives delicious fruity flavour which complements the sweet rich frangipane and buttery tart crust wonderfully. It is perfect for sharing with friends or family after dinner or as an anytime treat.

 

Blackberry and Lemon Tartlets

adapted from Waitrose
PastryFilling
  • 250 g White spelt flour #630
  • 1 tbsp Icing sugar
  • 150 g Butter, softened
  • 150 g Icing sugar
  • Zest and juice 3 lemons
  • 3 Eggs, medium
  • 125 g Butter, softened
  • 100 g Ground almonds
  • 250 g Blackberries
  1. Preheat the oven to 200C/400F.
  2. For the pastry, place the flour, icing sugar and butter in a food processor and blitz to resemble fine breadcrumbs, but not so the mixture forms a dough. Divide it into three 12 cm /4.7 inch tartlet pans with removeable bottoms and press into the sides and bases. Place the tartlet pans on a baking tray and bake for 10 minutes.
  3. Meanwhile, make the filling in the same food processor. Add the icing sugar, lemon zest and juice, eggs, butter and almonds and blitz until smooth.
  4. Scatter each pastry base with 50 grams of the blackberries and pour over 1/3 of the filling. Top the surfaces with remaining blackberries. Bake for 20 minutes until just golden and set. Allow to cool and set before removing from the tartlet pans.

Angie, Great looking tart...lots of fruit and goodies. I still think that its a little strange that you publish so many recipes about breads and goodies when you're a protein focused diner. How about a good pot roast or a steak with roasted veggies? Seafood would be another option... Take Care, Big Daddy Dave
