Snow Peas with Bacon and Red Onion

Ready in 15 minutes, this easy stirfry with snow peas, red onion, and bacon makes for great midweek dinner. Be careful to never overcook the snow peas to maintain their delicious crunch. You can add some baby corns, carrots, shelled peas, and shiitake or muer mushrooms to the stirfry to make it even more interesting and colourful.

 
  • 100 g Bacon slices
  • 300 g Snow peas, trimmed
  • 1 tbsp Olive oil
  • 1 Red onion, peeled and sliced
  • 3-4 Large garlic cloves, peeled and chopped
  • Sea salt
  • Freshly milled black pepper
  1. Lay the bacon slices on a large cold pan, turn to medium-low heat and cook for 5 minutes each side until crispy and browned, remove them onto a piece of paper towel and set aside. You can also do this in oven. Place the bacon slices in a large baking tray and bake at 200C/400F for 20 minutes until golden crispy.
  2. Bring a medium pot of water to a boil over high heat. Add in the snow peas and blanch for 1 minute. Drain well and set aside.
  3. Add the olive oil to the pan with bacon dripping. Add in sliced red onion and cook for 3-4 minutes until fragrant, add in garlic and sautee for a further 1-2 minutes.
  4. Return the snow peas to the pan and season with salt and black pepper. Saute for a bit until everything mixed together. Break the crispy bacon to the pan and gently toss everything together.

Snow peas are a cold-season vegetable...from winter to early spring..tons of them. Just bought another kilo from farmer market.
