This spiced pumpkin and honey bread from Matt Moran on DELICIOUS is fantastic for afternoon tea with honey mascarpone or toast a slice for breakfast and top with a pat of butter. If there are any leftovers slices, they make the perfect lunch box filler. The orginal recipe called for white spelt flour, I used a mixture of white and whole meal spelt. Feel free to use 100% whole spelt flour or just plain flour.

The stuffed butternut squash halves are filled with Gorgonzola and ricotta cheese, then topped with fresh sage sprigs and baked until golden and bubbly. Use other types of blue cheese or even goat cheese instead of Gorgonzola, and thyme or rosemary instead of sage. The recipe is very easy and highly adaptable. The only hard part of this recipe is cutting the squash in half. You need a sharp knife and a bit of patience to get the job done.

Ideal for afternoon tea with a cuppa or as dessert, this rice pudding slice is the perfect combination of cake and pudd. You can make the rice pudding a day before and store in the fridge after cooling down. The next day follow the recipe to finish the pudding cake. Store the baked pudding in an airtight container in the fridge for up to 3 days or freeze the rest for 2 months. Defrost overnight in the fridge, then reheat in airfryer or microwave for 2-3 minutes.
To make rice pudding, you need to use those round grain rice varieties like Comolino and Originario. Arborio rice, which is normally sold as risotto rice, is also suitable for rice pudding. In principle, you can cook rice pudding from all starchy round grain rice varieties.

With shallots, red onions, figs and balsamic vinegar and mustard sauce, this one pan baked chicken thighs taste flavoursome and aromatic. It's fancy enough to serve to guests yet easy enough to make for weeknight dinners. As always, I prefer using bone in skin on chicken thighs/legs, but if you have to use chicken breast, then at least use the one with skin intact. The crispy skin balances nicely with the mellow textures of the cooked figs to make this chicken meal really special and delicious.
