Parmesan Zucchini Spiral Skewers with Romesco Sauce

Treat your family with this Parmesan zucchini spiral skewers recipe that's as fun to make as it is to eat! It makes a great side dish or party appetizer served with a romesco sauce or ranch if you prefer. Made from roasted red peppers, almonds, garlic and olive oil, this easy Spanish roasted pepper sauce / romesco is rich, smoky, and delicious on seafood, vegetables and more! I used roasted peppers from a jar, but you can make your own.

 
Spanish Romesco SauceZucchini Skewers
  • 50 g Blanched almonds
  • 200 g Roasted red peppers from a jar, drained
  • 2 Garlic cloves
  • 30 ml Lemon juice
  • 1 tsp Smoked paprika
  • 45 ml Olive oil
  • 3 / 450 g Zucchini, halved crossways
  • 45 ml Olive oil
  • 30 g Pork rinds, ground into powder (or panko breadcrumbs)
  • 1/2 tsp Pepper flakes
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 50 g Parmigiano-Reggiano, grated
  1. Make romesco sauce. Toast the almonds in a dry frying pan for 3-4 mins until starting to turn golden and smelling toasted. Shake the pan often to turn them. Tip out and leave to cool.
  2. Drain the red peppers and tip into a food processor with the toasted almonds, garlic, lemon juice, smoked paprika olive oil, then blitz until well combined and almost smooth. Transfer to a small bowl. Season to taste.
  3. Preheat oven to 220C/425F. Cut the ends off of the zucchini and cut it in half crossways. Insert a skewer lengthways through the centre of each zucchini half. Hold a small knife at an angle and cut the zucchini while turning it the opposite direction that you want the swirls to go in. Spread spirals along the skewer to expose the cuts.
  4. Combine the ground pork rinds or panko with pepper flakes, salt, pepper and grated Parmesan. Place zucchini spirals on a baking tray and brush the swirls evenly with olive oil and into each cut. Coat spirals with pork rind parmesan mixture, ensuring coating covers the inside surface of the spirals.
  5. Bake zucchini skewers for 20 minutes or until crumb coating is golden brown and zucchini is tender. Serve zucchini skewers with romesco sauce.

I love spiral cut veggies! I used to have a thingy for that but lost it somewhere sadly. Wouldn't want to be the one to clean that Parmesan crusted pan though LOOOOL I did not cook anything today, bought some spinach burek for lunch even though I don't eat gluten, but these are emergency situations LOL
